I'm still blown away that he worked at two restaurants with not one, not two, but THREE Michelin stars each. Even aiming for 2 is a really bold move. Talk about experience.
Even though I rarely drink wine, it’s great to see André back on the channel. His videos are some of the most entertaining and informative that BA has produced. More, please.
Andre is the best part of Bon Appetit right now. I legit just want to hang out with this dude. I feel like brad would make me go to a fish concert but Andre is a chill bro.
I was told to cut the foil like you said but no one knew why we cut it so low. I didn’t know the history behind leaded foil and now we keep that tradition. Awesome!
This is absolutely my favorite series. Andre is such an effective teacher. Very clear, easy to absorb, casual teaching and I can see he really enjoys what he does. Thank you!
Great video, Andre! I love your energy and I think you’ll appreciate the rest of the story :-). I’m the proud daughter of the inventor of The Durand®, Mark Taylor (which he had patented in his 80’s, by the way!) - and I suspect you’ll appreciate knowing that it was actually named for his dear friend and mentor, Jean-Pierre “Yves” Durand, a world-renowned master sommelier. Yves would lead rousing cheers in French at wine tastings, where his incredible knowledge of wine was only exceeded by his joie de vivre!
Andre needs his own wine channel. He could introduce people into wine. Start by reviewing stuff you see in grocery stores, wine subscription services etc.
I’m an avid whiskey drinker and collector and I love watching André talk about wine. His knowledge and love for it makes me want to explore the world of fine wines.
I remember someone told me that Russian vodka used to come with a pry off cap because you never opened a bottle you were not going to finish. That is how I treat wine.
The coravin was a game changer for me. I felt guilty opening a bottle before i got one, and never really drank wine beforehand knowing i only had a glass every few nights and it’d noticeably degrade in quality. Both my enjoyment of wine and the wines i got have improved since.
The gf and I met this guy at a little spot in Brooklyn. Not sure if he owns the shop or no, but it sure felt like it; he chatted for a hot second and then recommended a really good wine. Date night was a success lol. Really cool person.
Why do you focus on color when the subject is wine? You sound like a leftist with some serious insecurity and guilt issues. Did you relatives own slaves or are you just a cuck?
I could listen to you all day. I rarely drink, if I do it is wine and in a restaurant, so none of this effects me but I love to listen to you explain it
That Coravin is definitely a must buy and really cool tool to have if I am going to start a hobby of buying wine when I grow older and more richer, really.
Andre is the man! Just discovered his vids and they’re pretty useful for a middle aged guy who is finally getting interested in wine. Thanks for posting.
1ST TIME WATCHING HIS VIDEOS, I'M NOW A FAN. A GREAT EPISODE, ANYTIME I CAN LEARN SOMETHING IT'S NOT A WASTE OF TIME, ANDRE WELL DONE. NO HIDDEN AGENDA JUST A SHARING OF KNOWLEDGE. KEEP DOING YOU, BROTHER.
Would have been cool to see him heat shock the neck of a bottle and then break it off (not sure of the technical term of that maneuver). Andre is literally the coolest. So much knowledge and he makes it all sound sooooo accessible
I have no wine “knowledge” whatsoever and I’m truly not much of a fan. That said, CANNOT GET ENOUGH OF HIS VIDEOS. Whenever you see someone who’s this good at their craft, its great to watch.
My Coravins are my absolutely favorite items in my house. The needles are super fragile, but I absolutely love both my timeless and the sparkling system! Andre you are a treasure!!!
Just wanted to say that André Mack is an expert and he knew that bottle might explode when he sabered it. This most commonly happens when you leave the bottle out and don't super chill it before sabering. I usually don't remove the cage when sabering, but everyone has their own style. Respect!
I remember one time where my grandfather was opening a bottle of champagne for some celebration, he was having a hard time with the cork and we asked him if he needed any help he said no and after a moment of struggling pulls the bottle back to look directly at the cork, at which point the cork decides now is a good time to release itself. Most spectacular Black Eye I ever saw and the most embarrassed I think I ever saw my grandfather.
I've done sabering twice with a real sword, it's really fun. I was told that as well as the bottle being cold, you want to run the blade down the barely visible seam where to two halves of the bottle are fused together, where that seam meets the lip is where most of the stress gets concentrated and you get a nice clean break right below the lip.
Andre is like a good animation - the kids (wine beginners) and the adults (wine pros) will both enjoy the cartoon, and for enthusiastic amateurs like me he is just solid gold. If he doesn't get his own Netflix show soon the there is officially no justice in the world.
I may or may not have gotten away with not spitting wine out when I took a college level wine class by convincing my class that throat feel was an important part of the tasting process. I still stand by this
The durand can be used to remove a cork without damaging it such that it can be recorked with a proper seal, provided you don't use the screw combination.
Wow I did not know Andre was the sommelier at the French Laundry, huge respect. Not that I wasn't impressed by his well of knowledge in wine and his enthusiasm already.
A good wine friend went to portugal and got into port. Hooked. He brought back some port tongs. Check that out some time. Super cool and fun to do. Works like a charm
I was working for Total Wine when the Coravin first hit the market and it really was a game changer for high-end consumers. My store had extremely wealthy clientele that would come in once or twice a year or so to stock their cellars, pretty much only dealing with myself or my manager directly literally dropping well more than my annual gross at a time, sometimes even 3 or 4x my annual, and when the Coravin hit pretty much all our high end clients each got at least one and began coming in much more often to see what was new that they could use it on to see where things were at for themselves and then commit to larger quantities later.
It was always on my bucket list to saber a bottle of sparkling or champagne and I finally go the opportunity this past winter in Vail, Co to kick off Happy Hour at the hotel I was staying at. Went smooth and was such a cool thing. I was told that there is a small seam that is barely visible in bottles and that seam is best faced upwards because it's a weaker part of the bottle. I used a napkin to hold the bottom and pop! It was awesome.
7:49 that's actually a neat trick for flashlights in general. Shine it upwards onto a white ceiling and it bounces back down, lighting the room like a regular ceiling lamp. It'll be darker, but everyone can see evenly with lighting they are used to without risk of being blinded by the beam
Just found you and am loving all that I am learning. Not new to wine, but there is always room for more knowledge! Thanks for sharing your knowledge in the world of wine!
The fact a sommelier not only endorses saber-ing, but starts the video off and has a waterproof transport box for his kit to do it is incredible! I approve!
Exactly how I imagine "sabering" will go on most peoples nice expensive special occasion bottle. Not to mention the looks you'll get telling people you're into sabering
I got to sabor a bottle of Cremant d'Alsace on my last day of culinary school, it was awesome!! Took me a couple tries because I was timid but I will always treasure that memory. I still have the bottle and cork in my room!
Today Sabrage only works well on Champenoise bottles due to glass in other bottles being generally thinner and not suffering the typical stresses produced by the disgorge freezing.
You are my hero. I love you vlog because I’m so into wine and I love hearing your opinion. Now I as long Christmas list with the nice gadgets you just show and I can’t wait.
I'm not a wine expert but I but I really appreciate your down-to-earth relaxed feel. Seems like the other Sommeliers I've watched are very uptight and rigid like an android for some reason
I really want to see André rate wine “tools” that people use that are either awesome or completely useless or frustrating to use. If that already exists, please let me know.
fantastic video. bravo! the how to and what if stigma of wine opening demystified. yes sir! your elegant hand movements speak louder than your own words, andré. terrific job! big fan! 🏆🏆🏆
Sabering champagne is definitely a party starter! I use the spine edge of my 10” chef knife along the seam of the bottle, works every time. I’m wondering if you might do a video on Port Pincers and if anyone still uses them? Thanks André for another great video!
I'm a private sommelier who works for private collectors, and Andre has just delivered the clearest, least pretentious, most informative lecture on advanced wine service ever delivered. Take notes people.
I did it with some Champagne bottles, everything went cool. You can practice it using those $3 buck sparkling apple juice bottles and your kitchen knife you don’t need the expensive nice case, only be sure to keep the bottle really cold and strike it with guevos following the bottle shape.
