    I like this because it shows well done isn't ruining anything, it's just people get too many thick cuts and end up having to finish it in the oven, or over cooking it.

      sorry but even a raw steak doesn't leaks blood When steak is cooked, myoglobin releases a red pigment, which mixes with water present in the meat, creating the red juice we see. This mixture is entirely different from blood and is a natural part of the cooking process for meat, especially when prepared rare.

    I made this just today with juniper berries in place of the black pepper, dried oregano, and dried thyme in place of the bay leaf. I did use the anchovies and garlic, and butter, though, and it came out fantastic. I paired it with pureed parsnips and celeriac and sauteed broad beans. I also put ground juniper berries and garlic in the parsnips and broad beans. I had it alongside a Glutenberg blonde, it was very tasty. Thank you very much!

    I grew up working on mixed farms (livestock plus grain or vegetable farming). They would generally give us breakfast before we started for the day, and it was almost always steak (baked in the oven usually on oiled or buttered sheet pans - how else do you make large numbers of steaks at the same time other than huge BBQ grill outside, which happened rarely) and fried eggs and potatoes (all from the farm). I never saw a steak on a farm that was seasoned with anything other than salt and pepper, or cooked to less than at least medium well done, then topped with a pat of butter. Completely delicious and tender. After working with animals a lot (gelding etc) the last thing you want to see on your plate is something that looks like blood, and in most farmers/ranchers opinion a truly good steak tastes better cooked than raw. Who likes the texture or flavour of undercooked fat? I love fully rendered beef fat on a steak. I agree there is a huge difference between a well done steak and an over cooked steak. The people who eat blue or rare steak are just doing it because they think it is what you are 'supposed' to do.

    • @CookInTheWeeds
      @CookInTheWeeds  6 дней назад +2

      That’s awesome. Buying 1/2 a cow from the farmer , the quality of the meat is 100 times better than what you would get in the store, in my opinion. I never used to like steak because my aunt was always the one doing the cooking while my grandma was at work. But after my grandma retired, she cook me a well done venison steak, and it was the most delicious Steger Arrowhead. And I've been a steak lover ever since😂 I wish that woman was still here, even though she taught me how to cook as well, I can't cook like that woman used to cook😢

    I'm usually one who doesn't go for the extra butter.. but, I'd try it.

    I prefer well done steak. People don't believe it can taste. Good. I also like medium rare but my wife only likes well done.
    I fine that the fat gets softer and it has a nicer juicer flavor and is easier to bite. The flavour of the fat changes and so does the texture when well done, and I don't think this is understood or appreciated.
    The best steak to make well done is fatty steak, the less fat, the better it would taste less well done.
