This looks like soup we used to get in a German restaurant in Northern Wisconsin...it was amazing. They also served "fritters with honey butter" as a bread course.
My Oma used to make these and we all fought over them. I HATED them as a little kid, but as I got older, I learned that they are so good! Sadly she passed years ago and no one got her recipe. But to be honest, there wasn't one written down, she just made them. My sister has something close to what she did though. I haven't had them in 15 years or so. I'm going to see what my sister has and compare to what you have here. Maybe something in between? I can smell them as you're making them. Brings back so many memories :)
Some recipes specify veal liver plus freshly grated nutmeg & cook on low heat in broth that becomes the soup these dumplings are served in. It's good to see alternatives.

Can u use chicken livers, and can u use dried parsley? I wonder if when it’s a little too wet if Parmesan cheese would work as well instead of extra bread crumbs?

Give it a try and let me know how it went, after we are called "traditional, but not" :-)
You should drop them into beef broth to cook them.
That would work too, just be careful that the broth is not boiling too hard. We sometimes cook it separate cause the stock is not ready.
