What perfect timing. I've made mochi cake before without potatoes and it was delicious! But I have potatoes I need to use up so I'm going to try this recipe.
I've made a version sans potato and it was SO. GOOD. Granted the recipe I used called for more butter and sugar. I imagine the potatoes make it even fluffier and more tender and allow for less sugar and butter. I'd say give it a go. I know I'm planning to because I have leftover potatoes from the holidays I need to use up lol

There is no substitute for sticky rice flour - it is what makes it a mochi cake. If you take for instance wheat flour you will get some kind of sponge cake. It might taste good but it won’t be a mochi cake.
There is no substitute for sticky rice flour in this case. Corn starch is not remotely the same. You need this special glutenous rice flour that is used to make mochi. If you don't like mochi it's better to make something else entirely.
I'm not sure but you can use the same portions and use lactose free for butter and milk * or milk ; milk vegetable * personally I find them in my supermarket look on the internet or books ..etc :)
Yes. It is sweet but not overly so. Sweet and buttery and chewy. Idk if there is an American dessert equivalent. I would describe the texture like a marshmallow but denser. Flavor profile wise, maybe a nutty butter cookie?

I find it's actually easier to make than brownies because the batter is like cake batter and evens out very easily. But once cooked, it has a chewy texture due to the rice flour. This is why rice flour can't be subbed out.

만들어봤는데 고로케에 들어가는 감자맛을 기대하면 단맛이 크게 느껴지고 그냥 모르고 먹으면 약간 단맛이 느껴지는 쫀득한 케이크예요. 짭짤해도 괜찮을듯해요~
