    Roasted Butternut Squash Fillets
    Ingredients:
    • 1 whole butternut squash
    • Vegan butter
    • Salt & pepper
    Instructions:
    1. Preheat oven to 185°C (350°F). Roast whole butternut squash until soft (about 40 mins).
    2. Peel, remove seeds, and slice into fillets. Use a ring mold if desired.
    3. Heat a cast iron pan with vegan butter, sear fillets until golden on each side.
    4. Finish in the oven at 200°C (400°F) for 10-15 minutes.
    Roasted Butternut Squash Seeds
    Ingredients:
    • Squash seeds
    • Salt & black pepper
    • 2 tsp maple syrup
    • Pinch of cayenne pepper
    Instructions:
    1. Clean and dry the seeds.
    2. Mix with salt, pepper, maple syrup, and cayenne.
    3. Spread on a baking sheet and roast at 200°C (400°F) for 10-15 minutes until crispy.
    Butternut Squash & Kale Puff Pastry
    Ingredients:
    • 200g kale (pre-chopped)
    • 1 cup roasted butternut squash (scraps)
    • 1 sheet vegan puff pastry
    • 1 block extra firm tofu (sliced)
    • 2 tsp olive oil
    • Sage & onion seasoning (see below)
    • Salt & black pepper
    Instructions:
    1. Steam kale, mix with roasted butternut squash, salt, pepper, and sage/onion seasoning.
    2. Spread the mixture onto puff pastry. Add seasoned tofu slices on top.
    3. Bake at 200°C (400°F) for 20-30 minutes until golden.
    Sage & Onion Seasoning Blend
    Ingredients:
    • 13g sage
    • 1 tbsp granulated onion
    • 1 tbsp granulated garlic
    • Pinch of smoked paprika
    • Pinches of black & white pepper
    • ¼ cup nutritional yeast
    • 1 tsp cornstarch
    Instructions:
    1. Mix all ingredients together in a bowl and whisk until well combined.
    Butternut Squash Tenderloin
    Ingredients:
    • 1 whole butternut squash
    • Vegan butter
    • Salt & pepper
    • Sage & onion seasoning (optional)
    Instructions:
    1. Preheat oven to 185°C (350°F). Roast whole butternut squash until soft (about 40 mins).
    2. Peel and slice: After roasting, peel the squash and cut it in half. Remove the seeds and cut the squash into "tenderloin" shapes or thick slices.
    3. Sear the tenderloin: Heat a cast iron pan with vegan butter. Sear each side of the butternut tenderloin until golden brown.
    4. Finish in the oven: Transfer to the oven and bake at 200°C (400°F) for 10-15 minutes until tender.
    5. Serve: Serve with a drizzle of vegan butter or gravy and sprinkle with the sage & onion seasoning, if desired.

    My Mom would roast a bunch of sweet potatoes and put a couple in the fridge for breakfast the next day. She’d peel the and slice then down the sides and fry them up in a cast iron skillet with butter so they got crispy brown all around and were nice and soft and sweet inside. Oh what a childhood memory.

    Amazing!! A few things....people actually have the audacity to make suggestions re water and your cooking???!!! Really???!!! I am stunned!! BUT...I am making these dishes...thank you so much for the delicious butternut squash recipes and techniques!!! Wow!!! The cleaning as one goes however eludes me...sigh...the kitchen looks like a bomb went off when I am done.. and I have made almost all of your seasoning mixes and use them all the time!!!     Hi Derek, I’m new to your channel but really really enjoying it. And when I came upon this video today, I was so thankful.     Perfect! I roasted 3 squash yesterday!❤❤❤. I usually only make empanadas with butternut squash (which I will also do) but these new recipes are wonderful. That roasted seed recipe is super nice. I will me taking that puff pastry one to work tomorrow for lunch. I’m getting some ring molds too! Poifect!!

    My black lab female loved to roll in stinky stuff too. She was super sweet, not sassy at all. My female heeler mix, on the other hand, disdains stench but is extremely lippy. You are so creative with food - I’m always amazed at what you create. I’m pretty good at making your recipes, but I suck at clacking the tongs…some talents are inborn, I guess.

    You should try a reverse puff pastry veggie "pizza" . I make it 2-3 times a week and it's a great way to use seasonal veggies. It's super easy and you can make it totally vegan. If you're ever interested I can give you the recipe it is really good! Your amazing tofu and butternut squash puff pastry recipe made me think of it. ❤

    Dufour makes a plant based puff pastry, green lettering, I find it at my food coop, Whole Foods have it too, not sure about Sprouts.

    I love butternut squash!! Question about salt. Which one(s) do you use and does it make a difference? I use kosher to cook and Maldon to finish. The Québecer in me loves that you used maple syrup 😋😋😋

    Been vegan for not enough years, watched a female Dr vid yesterday that perpetuated the “myth” that soya products including tofu are detrimental to male testosterone levels. I eat it everyday 🤷🏻 I’d appreciate any info on your personal experiences guys!
