I live in the suburbs in Australia so I don’t have a lot of space to work with, and it’s hard to find canners, jars, etc. I haven’t got a pressure canner because they are around $350, but it’s on my wish list. But I am so excited for this Summer to try and do as much as I can.
I got mine from a relative getting out of canning. Try a resale or thrift store or garage sales when you are able. Here in the USA they are under $100. Also, my instant pot has a pressure cooking function for canning.
I love making ketchup using a mix of Black Krim,, romas, cherry and beefsteak tomatoes. The flavor is wonderful. I strain the extra tomato water, seeds and skins out using a metal sieve.
We shouldn’t try to make grocery store taste from home made goods. Grocery store processed food has spoiled our taste buds and our awareness of what food is supposed to taste like. Make it your own. Over the years I've tried so many ketchup recipes & been very disappointed after all the hard work & veggies!!! Several years ago I tried the Mrs Wages mix; wow, love it!! So much so that I refuse to buy ketchup in the store. Mrs Wages is SO MUCH BETTER!!! God bless!
I don’t have a garden, so no fresh tomatoes to make ketchup from. I use store bought passata, tomato paste, cane sugar, vinegar, onion powder and a very necessary ingredient for me: celery seed powder! Salt and black pepper to finish it off. Everyone who tried my homemade ketchup loved it. Some like it sweeter or spicier (like myself, so I add some habanero powder) but it is very much appreciated. And versatile: it can go with or on anything, cold or warm. I love to use it for my homemade pizzas.
I love you Mrs. wages they have some awesome mixes I use the pasta sauce mix and added a lot Of vegetables from my freezer and my freeze dried stock, zucchini winter squash Lots of herbs and spices it turned out to be awesome pasta sauce
I know you have a kitchenaid mixer: have you considered buying the strainer attachment? We use it to stain out seeds from our blackberries and to do our tomatoes. It stains out the seeds and the skins so easily. Even after they've been frozen, they stain so well.

I have gallons of bags in freezer, not as much as normal year. In CT, had cold snap, got all green tomatoes out of garden onto trays as ripen go into freezer bags. We use a lot of sauce. Normally be on 4th round, only 2 so far. Ketchup, I always have stock, but good to have a recipe. Especially bc my guys are Heinz snobs!!

I did try the ketchup recipe from Living Traditions Homestead and I love Hunts so I was hopeful. It fell flat for me. You are so right that ketchup is so subjective. It really tasted like a bbq sauce base for me, so now I have a lot of base sauce for other recipes. It was great in baked beans but not as a ketchup. I am leery of Mrs Wages having read some reviews of it being overly salty but I might have to give it a try if I can find some. Thanks.

I made a batch of Mrs Wages ketchup last year. I wanted to like it. Really, it doesn't taste good to me at all. Has a sort of "dirty sock water" thing goin' on. Hoping to find a recipe I really do like and will dump what I made last year out. Sorry, just being honest. I made Mrs Wages salsa, mild, medium, and hot, loved all of them. Made numerous batches of tomato sauce with the same types of tomatoes, all good. But the ketchup... (sigh)... just didn't do it for me.
Mrs. Wages mixes are so bad for you though. :( It contains soybean oil which is linked to neurological conditions and depression, anxiety, & Alzheimer's. Not to mention the soybeans are heavily treated with glyphosates. These ingredients are the reason for so many having mental health issues today and I thought canning was a way for us to eat wholesome foods without these chemicals.

I usually corn my tomatoes before I put them in the freezer it saves a step later on all I gotta do is peel the skins off
