When you take Phin out of the glass you should use the lid to pick up the coffee drops that are still inside to avoid dirtying the table.

My friends showed me how to make this a couple of years ago when I was in Saigon/HCMC and I always made it so bad when I got home, lol. Thanks for the reminder, and the tips on what coffee to use! I love your channel, been watching now for a bit, and can't wait until Vietnam gets better with the virus and we can all start coming back. Have a great day!!!

Thank you for making this one! I've been making my own Cà Phê Sữa Đá for about 3 years now and have it down to a fine art. BTW, Cafe Du Monde is from my home state of Louisiana. There is a restaurant in New Orleans called Cafe Du Monde that serves beignets (square, fried pastries, similar to donuts, served with powdered sugar) and CDM is their "house" brand of coffee. And as much as I love the rich taste of condensed milk, I'm pre-diabetic, so I substitute coconut cream instead. Pro tip: when I remove the phin chamber from the cup after it's finished brewing, I take the lid & turn it upside down to set the phin chamber on, so any leftover coffee dripping doesn't get onto the counter. Fun fact: Cafe Du Monde has a similar history to condensed milk. During the U.S. Civil War, coffee was in short supply, also, so chicory was substituted to stretch it further. Although coffee with chicory tastes stronger, it actually has less caffeine than regular coffee, because chicory has no caffeine.

Thanks for the refection. Cafe DU monde in the french quarter, my favorite place to go and many grade school field trips were there. I get flash back of me inside the yellow school bus as it is leaving the french quarter n seeing that farmer's market at the other end of cafe DU monde. How long has it been? Worlds fair of the 80's.

Thank you. I used to live in Port Arthur, TX, where there is a large Vietnamese population (fishing/shrimping) and loved to go to the markets there--where they also had Vietnamese coffee. We recently made it to a restaurant in Austin where we live now that we really enjoy. One day, I asked if they had it (not on the menu) and they did accommodate us and it brought back so many good memories. I ordered most of our meal in Vietnamese, which really impressed my date. Thank you for sharing this method.

Great video! ! I remember there was a topic How to make Vietnamese Coffee for my presentation exam when I was in Uni. Since then, I've looked for the sample on RUclips to practice but I do believe yours is the best! This is quite popular in Saigon with ice which can refresh the drinkers in the humid weather there. And now I do enjoy Vietnamese with ice everyday in Sydney even in the winter. So yummy

Thanks for sharing your coffee making method! I use Cafe Du Monde because it has a unique strong taste. I fill the phin to about 1/3+ and then put hot water, enough to soak the coffee but allow only some coffee to drip (Do not put too little coffee as the water will drain too fast making your coffee watery and may cause coffee grounds to fall through into your drink. Do not use too much coffee grounds as it won't allow the water to drain through properly). I leave the coffee grounds soaked for about 5-10 mins. Then dump the liquid that went through (should be little to none). This allows for the coffee to soak. Now add water to about half+ of the phin and let the coffee drip. After the coffee has finished dripping, remove the phin, using the lid as a coaster. I save the used coffee grounds for compost or additives to my garden. Now, add condensed milk to your liking (I usually add about 1/3 to 1/2 of the volume of the coffee). Even with condensed milk, you can add (whole) milk to about half of the cup and then fill it up with ice cubes. You will have a milky, sweet, slightly bitter aromatic cup of Vietnamese Iced Coffee. Yummmm!

I remember my first Vietnamese coffee in Da Lat sometimes in late 80', in an old, stately hotel from French era on the lake, and later on "Continental shelf" (already enclosed, so no longer a shelf) in Saigon. The tar-like vile concoction burns a hole in your stomach if you try to drink it without milk, but I got used to it in no time at all. I usually drank it hot with a side of freshly squeezed orange juice.

Hi Van, this is what I normally do when the coffee is ready. Instead of putting the coffee filter on the table, I'd flip the coffee filter cover over and lay it on the table and then place the coffee filter on top of the cover so it can catch the residual drippings and keep the table clean/less messy for the server. This is the experience from a San Jose, Ca. coffee shop goer.

Please tell us more about these coffee brands you present. In the USA, the Kona coffee grown in Hawaii is more acidic than other commercial types, because the coffee plants grow at high elevations and they take longer to mature, and the nutritional content of the coffee fruit and seed used for the beverages is different from the rest of the coffee types. Your demonstration was very good and I know that filtering without a paper filter is better, since the paper filter can filter out certain aromatic nutrients that coffee posesses.

I started drinking coffee when I was 3. Here in Louisiana, when you go to visit family you always drink coffee. It's a hospitality thing👍 Anywho, I was very interested to see that you showed a can of Cafe du monde coffee. The Cafe du monde is a coffee house that is in New Orleans and serves some really good coffee with Beignets pronounced bin yay, a square dounut with powdered sugar on top. Mmm mmm mmm Good yeah!!! Anywho×2, V love the vid, dig the garden of tranquility vibe, nice mural on the wall.

I keep playing with the proportions but can never get it the way restaurants do. I will try your recipe! I should probably try Vietnamese condensed milk, too. Easy to get in Honolulu Chinatown, but I always use Carnation because it's common in all markets.

Hello! I've never liked milk or sugar in my coffee. And I like to roast my own coffee, almost always arabica. But I've recently fallen in love with the phin. The most satisfying coffee I've ever made was either Turkish coffee or French press. Turkish requires grinding so finely it's hard on my hands and my hand grinder burrs. French press is best with the same one to ten ratio by weight as Turkish coffee and a longer brewing time, but the size means you have to make a lot of servings. Phin is engineered for approximately a one to ten ratio and long brewing time so it tastes a lot like French press or Turkish coffee, but it's easier and great for just a single serving. It's a very versatile brewer. I love it.

Contrary to the northern people, they make 'coffee phin' but don't put condensed milk firstly, after having finished brewing, they pour them into the another cup like you and add condensed milk and ice to stir well and enjoy it:)))))

Will you give us an introduction to the regional variation in Vietnamese food. If I'm not wrong, dishes like bun cha and cha ca are specialities of the Hanoi, but if you go down south to the Mekong Delta, they have dishes like ca kho to that are hard to find in Hanoi. And perhaps you could show us where the locals go to get these dishes so we can avoid the tourist traps.
