Vn “milk” coffee are very intense, that why many vnese usually use large cup of crush ice for dilution. Another fun fact: because of the intensity of the drink, the quality of the beans is usually not THAT important, because the milk just gonna cover everything. What more important is the ratio of milk to coffee. Edit: sugar rush! Enjoy
I disagree with your comment on the quality of the beans. It is VITAL to have good to high-quality beans. How the beans are roasted and grinded and filter can hugely affect the taste of the coffee. In VN, there are practices of some coffee roasters add butter when they roast the coffee beans. Of course, the ratio of the condensed milk is affecting the overall taste of it, but don't take my words blindly. You can try to compare the taste of coffees that are made from bad coffee beans, different types of beans, longer shelves stored, vs. shorter ones, with the same ratio of milk, then you can draw your own conclusions. There is a huge difference, I can bet you on that!

But you can simply enjoy a cup of vn coffee in the street (regardless of butter or not) as much as the same drink you make by yourself. As for the milk, it more about the amount of sugar you can taste. The question is” do you really high quality coffee beans for this to taste good ? Not really “ ,” do you need a good quality beans for a pour over to taste good? In my opinion , yes”

Saturday noon at 14.00 tried Vietnam coffee Sunday morning at 04.00 AM still not sleepy nor sleeping 😱 next time I will make sure to drink it only in early morning to give time for my body to wash out the effect.

I find that robusta bean and its bitterness goes much better with the sweetness of condensed milk compared to arabica beans! So choose robusta bean for your phin coffee

Wow the equipment looks very very similar to the South Indian coffee filter. I use it to make my coffee every morning. Will try making Vietnamese coffee from it, I had it once in a cafe and it was so yum!
I'm not sure if there are multiple versions but the one I know, they mix condensed milk with egg and whisk them "If you want it more foamy you can increase the time" and mix with coffee.
Me & my family love coffee. I love the history, brewing methods, beans, & roasting. I've had Vietnamese coffee but am curious how the cup of actual coffee is with this brewing method if you don't use the sweetened condensed milk?
Personally, i woulda used a larger cup for quantity and a darker roast. Condensed milk is very sweet and you really cant taste coffee unlesss u brew more coffee and have a darker roast. But if u like it like this, great. A interesting fact,(this story may very depending who u ask btw), viet coffee is "probably" created by accident. Back then we didnt have sophisticated tools to roast coffee so often times its just roasted in a metal barrel over a fire till it was super dark (there some ppl who still do this). You can image the taste of it by itself, so people started using condensed milk and it just worked i guess. A combo that was created purely off poor roasting method lol
Vietnamese ice coffee w/crushed the ice so it melt quicker diluting the coffee a bit because it’s pretty concentrated but it also up to preference ig so … not bad
Good recipe however sweeten condensed milk is mostly used for baking because of the strong taste. Maybe added in a larger glass and blended it might taste ok. Can milk and can sweeten condensed milk takes time to get use to the taste. I suggest coffee creamer of your choice 😊
It’s usually made with Robusta beans (which contain way more caffeine than Arabica beans). This is why it makes the drinker super jittery. Source: My barber is Vietnamese and he loves to talk while he cuts my hair. So anyway, his grandfather worked in the coffee industry before the war and had tons of anecdotes.
The only thing missing is you need to beat/mix the coffee until it is frothy before pouring over ice. Aeration gives it dimensions. Don't just stir it gently.
Traditionally, the Vietnamese coffee is used to relax and enjoy, so you sip whilst watching lief goes by on the streets. So the process of the super slow drip and the slow ice melt is all part of the experience. It's meant to be savored, not meant to be hurriedly gulped or chugged down in a large cup like in the US.
Hi there, that is sweetened condensed milk, not evaporated milk. However, your point is correct, it will make the melting process much more difficult with ice first 👌💯
Vietnamese coffee might have an extra flavor due to the butter or plant-based oils they use during the roasting process. Not sure how to reproduce it at home, probably by adding some butter? We usually buy Nguyen (Gourmet Blend?) pre-grinded coffee which has suitable grinding coarseness for phin.
I make different little bit. 1/Coffee first. 2/Condensed milk+ice+hot coffee in first step. 3/Spoon mix, it is look marble and enough strong to ready for long day😂
