Hello, my husbands haitian and i’ve tried to make this rice but my rice (even white rice) always comes out like chalky/hard in the inside. My grandma in law taught me with no measurements just liquid a little above the rice.. I fry the veggies in epiz and all the seasonings then I add water above rice, boil on high until the waters all gone I stir it and cover. It can be up to an hour later that it still be hard. So I add little water cover and wait but then it never turns out good. Always stays a little hard. Any tips?
Never liquid above rice, use the Haitian "mountain" technique. Rice needs to form a mountain above the water, think of it as a mountain peak above the water. Also, as someone who's been cooking Haitian food without my mother's guidance for the past 12 years (start by measuring your rice as you get more comfortable) you can use this technique.

Very very good. Indeed, we don't use curry in Haiti but Lamise added a great Haitian touch to that recipe. Excellent!
