Firstly, Kenta and "Ichiran, Ippudo" are basically different. Kenta is more like local smelly and punchy Tonkotsu ramen, I guess some people do not prefer to have it because smell and taste of Tonkotsu are pretty strong. And "Ichiran, Ippudo" Tonkotsu ramen is more like for everyone. It taste really mild Tonkotsu so I would say both are good but depend on situations. "Ichiran, Ippudo" are for daily use and Kenta is for a day that I want thick and strong taste of Tonkotsu!! Is it easy to understand for you?? sorry for not giving you which one is better😂

Does ramen making style differs from one region to other?
I guess there are several style in Japan but Fukuoka is the origin of Tonkotsu and some regions in Fukuoka have slightly different from others !!!
