- I assure you this recipe doesn't at all taste salty but succulent and delicious. Fish with a medium size scale are the best for this - think snapper, bream, sea bass, Moses perch, mu, pearl perch etc. The salt crust forms a protective layer over the fish and keeps all the juices inside while it cooks.
Of course the most selective & sustainable method of catching a fish is spearfishing which is how I got this one into the kitchen.

Awesome video, that fish looks delicious! These spearing videos combined with super legit seafood cooking videos makes your content very enjoyable and unique. On other channels I always anticipate to see the cooking and eating after the catch but it's often rushed or not included at all.

I personally like to put fennel rosemary and lemon slices inside the stomach cavity.
That way all of the aroma gets trapped inside the fish and it just impregnates every bite that you take.

Smoked fish is lovely. Had a sailfish smoked at a club meeting once in Australia. Tasted like a Christmas ham.

My inclination would be to use a probe thermometer, and cook it to 125°F (51.6°C).

I made this once with Black Sea bass (minus the egg white which actually seems like a great touch). My take is that it’s a nice party/ gathering dish but all in all I still prefer doing whole fish in foil and honestly it seems like a waste of salt even though salt is cheap and plentiful.

Starting to get together parts to build my own speargun. What did you use to cut the trigger mech pocket and what did you use to cut the track for your spear? I was planning on using a table router to cut the track what bit should I use?
Router table for everything. For the track I used a 5/16” ball nose cutter.

Hi Peter, the links are for the USA as you can’t do one link for each country unfortunately. The float there is a Seyvlor dive hunter. They don’t make them anymore and rare as hens teeth to find. I drove 6hrs to pick that one up.

little advice: take the gut of the fish by the gill and it preveent salt to go in the fish ;)

Does it matter where you have shot the fish? Does the spear hole affect it like no scales?
Head shot is preferential.

Daniel does the salt permeate into the flesh? or does it taste more like steamed fish?
It doesn’t permeate at all due to the scales on the skin. Not quite like steamed fish as this has all the bone barrow and juices going through it.

Hi Daniel , I really enjoy your videos, keep sharing those incredible
places. I wanted to inquire in case you or someone you know has
experienced something similar to what I’m about to mention. For sometime
now, I’ve been experiencing some unpleasant and dangerous situations in
the water. It has happened to me, that I lose my equilibrium at sea and
even in the pool multiple times. The usual pattern is that I completely
lose my equilibrium and then I have to close my eyes and hold on to
something, after a few minutes everything returns to normal. It always
happens at the end of my dive, I feel like my ears get inflated and when
they are deflating little by little is when I start to lose my balance.
I don't have any problems equalizing when I'm going down, my ears begin
to inflate when I'm reaching the surface. I have asked everyone I know
and nobody knows why it happens or how to avoid it. I've even gone ahead
and seen a specialist ENT doctor and my results are negative for any
suspected abnormalities. I don't know either what it could be so I’m
continuing to run tests. Any advice or answer you can provide from one
fellow spearman to another. I love this sport and I can’t see myself
without it.
