    Awesome job with this! When/how did you decide to pull it off for chilling in the fridge? At a certain temp, time, or color/feel?

      I did it when the bark was set and that seemed to work well. I'm starting to experiment with combining this with other techniques so stay tuned for some fun experiments!

    This same method.. but in the warmer for 10 hours at 140… hmmm

      We are planning to do that test now that we have learned so much about resting brisket. I bet it’s going to be crazy!
