Great choices to feature! I’ve been to Chef Kang & Ji Ji. I would describe Chef Kang as a really well-done version of the CLASSIC HK wanton noodles. The egg noodles are super thin & springy, the sauce salty but light (I disagree that it’s dark/ black sauce leh), the char siew is good, unlike the thin, dry & tough kind found at most wanton noodles stalls, although not the best that I’ve had. I would return again except it’s rather inaccessible (it’s at TPY but a bus ride from the central then still gotta walk in) & it closes super early at 3 or 4pm so I want to eat it’s also not open for me to eat! Ji Ji is nothing like the different kinds of wanton noodles that most of us are used to, it’s indeed unique! Yet there’s still some familiarity! I think the closest comparison would be Pontian in terms of the springiness of the noodles (but A LOT MORE springy, it’s insane) & the fried wantons. I don’t think I see it here but they used to have braised sliced Chinese mushrooms in the bowl too & it’s really effort leh (just like how the soup has goji berries) & most importantly tasty. I agree Ji Ji is super value for money for its portion & types if ingredients. My only gripe with it is the char siew, a bit lacking effort leh BUT it’s not terrible & whatever it lacks the rest of the bowl makes up for it. It’s a must try! See even Ben is so impressed by the noodles alone haha. I’m not really a wanton noodles fan so take my words that this one is really a must try. Ji Ji is also very accessible in Chinatown, the hawker centre right next to Chinatown Point that’s right next to the MRT station. Be ware of weekday office lunch crowd though, can get very crazy so if you hungry you’ll end up being very frustrated haha. The last place, I see the char siew I already know it’s gonna be good. The mixed fatty & lean cut looks sooooo yummy with the proportion & it seems nicely glazed & charred. 🤤 And the ramen egg is a plus! It’s not onsen egg btw. Onsen egg is the soft boiled runny kind, which I don’t like, I refer this ramen egg, it’s almost like hard boiled but not too well done so it has a somewhate gooey centre & the egg white part is infused with soya sauce & mirin taste, yums.

Yes. Closest taste I can get to my childhood memory. Singapore wanton mee using tomato sauce. Mslaysia uses black sauce with fried wanton. My favourite childhood wanton mee is from The New World - they handmade the egg noodle... lost taste since everyone moved to the hawker in last 70s.

The first all is an all rounded winner in terms of taste, quality and affordability. The 2nd stall is too sweet and taste weird. Will not recommend at all.
