    Question. What purpose does the vegan protein powder play in the bake? Is it just to increase the protein content? Could it be subbed out with additional flour and vanilla flavoring? Does protein powder also contain sugars, so that would need to be increased also? Looks delicious.

      Hi, there! The protein powder replaces the cocoa powder in my Grammy’s original chocolate mayo cake recipe. :) it adds an additional punch of vanilla flavor and does a little binding too, but not enough to be a deal breaker without.
      The one I use has some sweeteners in it, so you would probably want to add in an addition 3-4 tablespoons of sugar to account for it if replacing with flour - which you can totally do.

      @@CookingOnCaffeine Thanks! I've yet to jump on the protein powder band wagon. Just haven't gone there yet, but I can understand the interest. And not being allowed cocoa/chocolate, I really appreciate a good vanilla cake.
