Oh man. Wowza. I put the brakes on when I saw this recipe. I can't wait to make it. Your recipe looks so good. I might change out the Mexican Chorizo and use the Mexican Soyrizo instead. Another option use Linguica taking the casing off because I'm Portuguese. It tastes the same but more like sausage.

I might have to up the lobster and remove the scallops, for some reason they don't sit well in my stomach, though I love the flavor. All other seafood is golden though! Maybe some clams or mussels? Ive only made paella w/ andouille ssg instead of chorizo, & muscles instead of lobster. Otherwise everything else is the same. Do you think those substitutions could be made w/ your recipe? Also, when y'all were spreading the rice mixture in the pan, the only thing I could compare it to was like "spreading brownie batter in a dish". Is that an accurate comparison?
Hello folks.....one piece of advice...the "paella" is called like that because of the pan where it is cooked in, therefore what you did there would never ever be one....more over the ingredients of a seafood paella wouldn't be the same either....if anytime you want to do it properly you can come to my house in Valencia (Spain).
