On the I chord, you can play the maj7 (F#) on the D string. It is already fretted in the previous chord (D7). Then you end with root-7th-3rd (G-F#-b) for the final chord.

For the ii V I ending with the D major chord, can you add the C# on the 4th fret of the A string to make it a Dmaj7 and not play the open G string? or play 2, open, 4, 2 for a fuller DM7 by adding the A on the G string?

if you are looking for less finger movement then why not use the F# (D string fret 4) when moving from D dom7 to Gmaj7? ( I tried it and it sounds very bad with the open G against the F#.) But it is less finger movement: So less finger movement is not always the criteria for forming a better sounding chord.

when you were doing the key changes at the end, how did you know where to go? like what kind of progression was that? sounded great

I think it is a McClung Armrest. They are really an amazing addition to a good instrument. They allow the wrist to not be as bent when using the pick. You can check them out here: hillcountrystringworks.com/armrest5.html. I have had one on each of my mandolins I have owned. I would not go without one.
