  • This is my favorite version of Butternut Squash Pie. It's light, custardy, and not too sweet! Ingredients are listed below:
    For the crust:
    1 1/2 cups all-purpose flour
    2 tablespoons sugar
    1/2 teaspoon salt
    1/2 cup (1 stick) cold butter, diced
    1/3 cup ice water
    For lining the crust:
    5 ginger snap cookies, finely crushed
    For the filling:
    3 large eggs
    3/4 cup sugar
    1 teaspoon cinnamon
    1/4 teaspoon ginger
    1/2 teaspoon pure vanilla extract
    2/3 cup heavy cream
    2 cups butternut squash puree

    Really, they click off because your video is too long? Not me, It can't be long enough for me. I so enjoy every second of your videos, BTW, the persons who click early off because the video is too long (that already is ridiculous), are not real lovers of great food/recipes. And you what?, totally in my opinion of course, we don't need them. You go Kevin, you are so multi-talented, people should go a little deeper in what you accomplish every day. It's not only food/recipes but I adore all off them, you take us to the markets, you show us your gardens, you let us take a look how you take care of your beautiful furnishings, creating a wonderful cozy fire in your Parlor room whilst having your lunch or dinner served with us!thank you, thank you 🙏

    Love the idea of the crushed ginger snap cookies to avoid the “soggy bottom.” I’m definitely trying that with my Thanksgiving pumpkin pie this year! Good food can’t be rushed so don’t apologize for the length of any video! You’re a wonderful teacher.

    There is no such thing as a "too long" Kevin Lee video. Love every second of it. I enjoy seeing your videos....they feels so convivial and natural. I'm working my way through the archives trying to view every single Kevin video. Toss up between the pumpkin soufflé or the butternut squash pie for the holidays.

    I’m sooo glad you did this video! Don’t you dare worry about your videos being too long! You’re the real deal! I’m so glad I came across this video 3 days before hosting Thanksgiving and I’m so glad you showed every step in real time, real life. Too many videos on the tube fail to recognize common occurrences in the baking world and will make a piece of trash seem delicious. Your recipe had me drooling before I even got into the kitchen. It’s perfect!

    This is right on time for our Canadian October Thanksgiving. Those of us who love to cook and bake, don't find your videos too long. Actually, they are perfect for cooking along..Those who click and leave, watch cooking videos for entertainment only. Thank you Kevin for sharing the recipes with us.

    This pie looks delicious. I to like the lighter color. Rolling the dough from the middle and turning makes it so much easier. I don't find your videos too long.

    Beautiful and delicious pie! Until now, I've never heard of a butternut squash pie. I'm going to have to grow some of these squash and make some of this pie! It looks so good and very tasty! I can't wait! Thank you for the video and recipes! 😊🧡🥧

    That's one Good-looking pie Kevin! I agree that those store-bought crusts taste like cardboard especially the graham cracker ones are like shoe leather. I'm going to try your food processor recipe .It looks very tasty. Thanks for the informative post.

    Ginger snaps. What a unique idea. I grow several different varieties of squash. I tried butternut this summer. I had three butternuts mature. I haven’t tried one yet but this looks delicious. Thank you.

    Ha ha , Love the "taste testing " comment. Saving this recipe. ( Especially the all butter pastry trick in the Food Processor ) . I will use the pastry recipe to make quiche.. so plan to make x 2 of your recipe and freeze one for later inside a zip top freezer bag. All the best to both of you , for a wonderful fall season & beyond.

    Take your time, I am enjoying the video.

    A friend bake one and added 3/4 Cup of coconut and it was good.

    I just love that cling film dispenser that cut off mechanism is amazing.... I hate working with the stuff because it is so difficult to cut it off 🤦‍♀️🤬🇿🇦

    Hi Kevin--thank you for going through every step in real time! It is so much better than someone pulling a pre-made shell or whatever out of the oven and briskly continuing the recipe, neglecting to mention that that little maneuver added an extra 45 minutes of cooking time. I think I speak for many when I say, "I stay to the end!"

      Hi Mary - Butternut squash is my favorite winter vegetable. It has a pleasant nut-like taste that is rather unique!

    Nice pie Kevin, like all your recipes, when you wash your hands and use sanitizers , all your natural immunity is actually washed away , so do not wash

      Dermatologist said excessive soap/hand sanitizer caused my ring finger to break out. So sorry about your thumb!
