to me it seems he got a burn out syndrome,, coz he was good and even got covered in magazines when he worked for someone else. it is way diffrent when you work for someone else and your only responsiblity is what ever you are assigned for, but when you own busines and in a same time work same thing you done for someone else, in same time you need to make orders, pay bills, pay staff, pay for this or that, you start to lose time for yourself. my friend's partner is a head chef in a very prestige austrian hotel, with michelin stars, more than 2. that same hotel have 2 other head chefs, so they have 3 chefs for 3 shifts. and my friend's patner said he would never ever open his own place, coz it is not worth it,, there is no place to grow, no time for family, friends or yourself, and you need to know the business and market and navigate in actual business waers. there are just few chefs on a world like ramsey, who managed to pull of what he did. but for that your need to also be a business man. some people cant handel both, coz they lack knowledge n the other departament and they cant afford a person who knows that apartment coz they start it wrong from day one. this guy is perfect exampel of someone who took to big bite and lost himself in it, burned out, stressed out and oly place where he can vent off is his own place and his own staff. whn you work for someone else you do your shift, you get your paycheck, you use your free time to vent of going out, fishing or what ever. pretty sure this guy does not have a time for it, coz he is probably working 7 days a week, when he is not cooking, he is preping, sorting bills, ordering and who knows what. he become bitter, angry, frustrated, full of stress and worries..
How can you go wrong with fettucini??? Pesto, chillies, black pepper, cilantro and parmesan. Not hard! Paul "hates the cake" but still serves it? Gordon loved it so what does that say about Paul's taste buds?? And Paul, the customers don't care what you are going through, they are paying for a service!!!
They closed shortly after the episode aired in 2010. The pastry chef left to have her own pastry business.
