My family is not crazy about raw onion so I cut the onions the night before and soak them overnight in the salad dressing. Softens the onion flavor and keeps everyone happy. Your son knows how to get “the perfect bite”! 😉

I think it tastes very good. But this is not the real "Panzanella" that should have more vegetables and no cheese 🧀 I think so but it's not so important, maybe that's a local variation of the recipe.

Yes, that should be fine. :) But add it to taste. White vinegar might be a little strong. White wine vinegar would also work and also apple cider vinegar, or even balsamic vinegar
