I am curious as to what the cooks in the kitchen think. Do they like to eat Indian food or do they go home and eat Mexican (or whatever their native food) food? Do they go home and make an amalgam of their normal cuisine and Indian cuisine? My native food would be French Canadian, which for the most part, is the same as American with the exception of a few dishes. I guess normally I ate American food, but when I started cooking Indian food, that was it. That is literally ALL I cook and eat now!
@dharmo rakshati rakshitah In USA & Canada , INDIAN Restaurants serve the worst Food, reason being most of the cooks are the refugees, plus Indian restaurants buy Grade-3 Meats, which is 3-6 months old, sitting in their freezers and thirdly they don't know how to cook Goshtt Dishes. For Delhiites, it's always good to find restaurants owned by Mohajirs from Karachi ghat very well satisfies their thirst for Delhi Goshtt. Lots of people get sick & Food poisoning from Indian restaurants whilst this isn't the case with restaurants from Karachi (but not Lahore though). It's a well known fact.

Bisi bele bath is like the dish of Bengaluru from the state of Karnataka. Bengaluru gets its name from that dish. Benda(streamed) kalu (lentils) ooru (place/city) = Bendakaloru -> Bengaluru. It is like sambar rice to say in simple words but the lentils and masala goes in along with the rice into the cooker.

Good one but South Indian is more Tamil / Karnataka.... Kerala has pootu, appams in different forms, meat or veg stews and Andhra has Minnapa roti, Pudugullu and Goa has Bhaji ( mixed veg) with Pav bread
