Hazelnut Butter Cookies
Ingredients for about one dozen 2-inch-diameter cookies
1 cup (234g) pure, unsalted hazelnut butter, well-stirred
1/2 cup (100g) granulated sugar
1 large egg, beaten
Pinch of salt
For topping the cookies: a sprinkling of Demerara sugar
Center the oven rack, and preheat the oven to 325F (160C). Line a baking sheet with parchment.
Tip the hazelnut butter, granulated sugar, egg, and salt into a medium bowl. Stir vigorously with a stout spoon until the mixture becomes quite thick -- about 1 minute.
Use a cookie scoop to form cookies, and place them on the prepared baking sheet. (Alternatively, you can pinch off cherry tomato-size clumps of dough, and roll them between the palms of your hands.) Gently press down on the cookies to flatten them slightly. Top with the Demerara sugar.
Bake until the cookies develop a crisp edge -- 15-20 minutes. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. The cookies will firm up as they cool.

Made the sweet potato soup and chicken Marbella today for four guests.. Used breasts this time but will definitely stick to thighs in future! Breasts were slightly dry but the juice helped. Made the cream cheese salami triangles as well, big hit as were the smoked salmon bites that I made. Soup too was a big hit, I added a can of coconut milk to make it creamy and eke it out!

Tempting cookies. On our farm here we keep the pruned branches of the trees and some logs from trees that are almost hundred years old , that fall in storms for the fireplace that we need towards the end of December. Our villa is almost 100 years old and I so like your home.

The name Demerara is a Dutch word. I was born in British Guiana and migrated to Canada 48 years ago. Love your channel and will be making your Hazelnut cookies for the holidays. They look amazing.
Hi Kevin, your hazel nut cookies look just the business. In the UK we have a product called Nutella which is possibly slightly similar to your hazel nut butter. Instead of butter though they mix the nuts with chocolate. I doubt Tierra Farm would thank you if I ordered a jar of their butter for shipping to the UK! The cookies made up beautifully and I really should follow your lead and buy a mini scoop for portioning out cookies.
Your reception flowers are lasting well. Cleaning up after the concert appears not too have been too much trouble given you have everything to hand that you trust. Those floors have seen so many guests since they were first laid in 1826. Just a thought: had you been around then you would have been contending with horse manure as well as general dirt so thank goodness for some small mercies!

Kevin, if you havent already, please try Lapsang Suchong Tea. It has a very smokey flavor. When i lived on my Chinese Junk in rhe San Francisco Bay Area, i always had a pot warming on my wood burning stove. It was particularly inviting one winter when we had continuous rain and all of us "Dock Rats" , live aboards would find it very comforting to warm up while afirming our life styles of on the water.😅

I love this three-ingredient cookie recipe! To be honest, I don't like cooking, but I still want to produce delicious food my family and guests will enjoy. Kevin, I first had hazelnut butter in Iceland, about five or six years ago. I loved it. But unfortunately, I can’t find it in my regular grocery stores. I DID wonder about your not using a grate in your fireplace!! I just assumed a fire would burn better on a grate, but I can see that's not true. Your fires always burn just fine!! And cleanup MUST be way easier!! 😊😊😊
