Authentic Slow Cooker Barbacoa! | Tex-Mex Queen

  • Who says Barbacoa can’t be enjoyed from a slow cooker? Vianney shares with us the importance of Barbacoa in her life and how anyone and everyone can make one of the most traditional foods of Tex-Mex cuisine right from their homes!
    INGREDIENTS
    2 pounds beef cheeks
    2 pounds beef chuck roast, cut into 1-inch pieces
    4 teaspoons salt
    2 teaspoon pepper
    1 onion, quartered
    3 cloves garlic
    2 bay leaves
    Tortillas
    Salsa
    limes
    DIRECTIONS:
    1) Place the beef into the bottom of the slow cooker. Season with salt, pepper, onion, garlic and bay leaves.
    2) Cook on LOW for 6-8 hours until the meat easily shreds. Remove the bay leaves and large pieces of onion.
    3) Shred the meat with two forks, return to slow cooker, stir and keep on warm.
    4) Serve with warm tortillas, Pico de Gallo, and salsa

    Thank you for sharing. I was looking for an easy beef taco recipe (other than standard ground beef). I notice dependimg on location some have an adobo type sauce but the simplicity of a few added ingredients allows the real beef flavor come out. Just curious how much is beef cheek in your area. In N. Calif, it’s $8.99 lb.

    What if you can’t find the beef cheek? Would using all roast beef in the same way still be considered barbacoa?

      I don't know how authentic it is, but I have made a knock-off Chipotle with chuck roast only that has an amazing depth of flavor. Authentic? Beats me. Lol, when I was a kid Hormel Tamales were the only Mexican food in the house.

      No it doesn't taste as good I tried chuck roast. I'm making some now with beef cheeks & cow tongue. Yummy.
