I normally cook the egg plant with bucket loads of olive oil - almost like antipasto. Wiith your recipe, steaming the egg plant also soften the egg plant minus the oil. And taste great. Thanks for your recipe.
Okay so I tried it. I realize the mushiness is needed so the flavour will penetrate the entire eggplant. It was awesome. I also added oyster mushrooms to the dish and they added a wonderful firm texture. First time trying this type of mushroom.

I have always fried my eggplants never thought of steaming them. I steamed them as you recommended and popped them into a screaming hot broiler. They turned out just as great as fried eggplants! Dipped them in soy sauce + lime. YUMM! Thank you for sharing!

I even learnt to say the word for eggplant in Chinese (still remember it from 13 years ago)... despite the fact I was only there for a month and couldn't speak much Chinese at all! hehe And the housekeeper at my friend's house (who only spoke Chinese) even taught me how to cook it! hehe A vegetable very close to my heart! :)

Hi woodwitch2o, I'd recommend using Gold Plum Chinkiang Vinegar. You can buy this from a Chinese and/or Asian food store in your area. I'd also recommend Gold Plum Superior Dark Soy Sauce (or light, if the recipe calls for light - in fact, I believe it is the light version that ChineseHealthyCook is using, as I recognise the bottle. As I do the vinegar ;)) For the spicy bean paste, I use chilli bean paste (produced by Lee Kum Kee). Again, your local Chinese / Asian food store is the place!
I do a recipe very similar to this once a week when the eggplants are in season. The problems you mention are taken care of when you serve over steamed rice. Mmmmm good! I use home made chicken stock instead of water (and no sugar or vinegar), so it is more savory and not that sweet / sour flavor. But probably get a bit more heavy handed with some red pepper flakes (personal preference).

Are there any Asian groceries there? Chili Bean Paste is a key ingredient for Sichuan cooking. If you cant get hold of chili bean paste you can substitute it with Black Bean Paste and add some chili peppers into it. But then again you may only find black bean paste in Asian groceries.
i added the corn starch, although it looked like you used a lot more than 1 tsp corn starch then what you said earlier in the video. maybe ill boil the sauce for bit longer and use more corn starch, overall a good recipe, will give it another shot, thanks.
