Easy Delicious FONDANT POTATOES/Melting Potatoes -Oven & Pan-Fried

- Upgrade you potato side dish with these easy, delicious Fondant Potatoes. These potatoes are also known as melting potatoes because of their melts-in-your-mouth effect once prepared.
The oven Fondant potatoes are peeled and cut into squat cylinder shapes, browned in oil on either side in a pan, then roasted with butter and stock or water. This results in a potato that's almost creamy in the middle, whilst being browned and crisp on the outside.
Whilst for pan-fried fondant potatoes, they are cooked with water or stock and butter, then friend until they are dark brown. They are then left in a pan to cool down until they release by themselves from the pan. If you do not wait for them to release, they become chewy and bitter. It is difficult to give cooking times for the potatoes because of varying thickness. In the video I have given estimates.

Preheat the oven to 200°C or 396°F
Tip/s:
For pan-fried potatoes
- You will have to be brave to brown the potatoes because it is easy to think that they are burning and only to discover that they have not browned yet.
- Check the sides of the potatoes to see how far they have browned underneath. Do not try and uproot them to see.
- Wait for at least 45 minutes before uprooting them and they should release easily by then.
Keep the potatoes cut when shaping for potato mash
To clean the pan, soak it in warm water for an hour and wash it or pour water in it and let the water boil on a stove.

4 x 400g/14 oz large floury or sticky potatoes
3/4 tsp cooking salt
1/2 tsp black pepper
2 tbsp extra virgin olive oil
3 tbsp / 50g unsalted butter
6 thyme sprigs (sub 1/2 tsp dried thyme)
1 cup chicken stock / broth /water
