I know I'm replying to an old comment, but this type of cake génoise don't require any raising agent, and as you said, it's whipping the eggs that makes it fluffy.

Your videos are so cool and you inspired me to try and make this cake, unfortunately, the cake didn’t rise at all and it was super dense so I was wondering if you missed out a step or if I just really suck at baking 😂 I didn’t see any rising agents such as baking soda or baking powder, so I was just wondering if that was left out? Great videos though👍🏻 I really enjoy watching them💪🏻❤️
I didn't put any baking powder or soda~ I think it's important to raise the temperature of the eggs to make a rich foam~^^ Thank you for nicely look at my video~😊

Hey I just made this today and I wanted to say the measurements are probably really really off. Like I followed it down to the detail and got out my stand mixer and everything and it came out really short and airy (i didnt overmix the eggs or anything) and I was barely able to get two thin layers from it. Also the caramel sauce was nowhere near enough and the cream didn't thicken as much

Try a vanilla cake recipe. It should be more moist that you wouldn't even need simple syrup.
