I think I am pretty good at drawing and everytime someone tells me that I have talent I get pretty mad eventhough they mean it as a compliment and I know they mean it like that, it's just the fact that pisses me off that they don't know what their talking about!
It's hard honest work and really nearly everybody can learn it.
Real talent is pretty rare in my opinion.

여기 말고 다른 수제 어묵 집이었는데...
중학생때 학원가는길 시장을 지나야 빨리 가서 음식냄새나도 꼭 지나갈수 밖에 없었는데 그날 어묵을 만드는걸 처음봐서 신기하고 손이 너무 야무지게 움직여서 길중간에서 머리만 돌려서 한---참---- 보고있었는데 아저씨가
"허허 너무 뚫어져라 보면 긴장되 핳핳핳"
정신차리고 가려는데 "하나 맛보고가---!!"
"막 튀긴게 진짜 어묵맛이야--!!" 해서 가까이 갔더니 종류별로 하나씩 주셨죠...
세상 그렇게 촉촉하고 쫀득한 어묵이었고ㅠㅠ 생선살 냄새도 너무 맛났고 고소하고 약간 짭짤한게 웃음이 날정도로 맛나서 행복했어요
"간장있으면 좋은데 핳핳핳 그냥 먹어도 맛나지? 핳핳핳" 입에 어묵이 가득차서 고개만 연신 끄덕였어요ㅋㅋㅋㅋㅋ
추억이네요ㅋㄷ

Other than the bare arm mixing I find this thoroughly satisfying to watch.
The sound of the chopping board, every step sounding the same...this is the perfect ASMR for OCD people.
It reminded me of that cup song where the chicks clapping her hands and stacking cups for some reason.

If u have an asian market near you, you can buy frozen fish balls. Its def not the same but still yummy! If they dont have a korean brand, chinese brand works too but its a bit different texture

its a trade off, it goes beyond simple efficiency, the risk of accidents, contamination and even overal quality are big points towards machines, however, on the other hand, you have a diferent type of contamination, a diferent type of risk of accidents and a diferent level of quality.
its never a simple "its cheaper" question. there are jobs that machines are used because of how shitty they are, and then there are jobs that are made much easier because of machines.
ALSO, because you are using a machine, doesnt mean you will have less workers. be it because you will need someone to use that machine, or even, the job the machine does, only speed things up as opposed to subistitute it.

The way the cook slides the knife across the table, knowing just how much fish he needs to flatten before tossing it into the fryer in five seconds is amazing to watch.
This dude's oil is so clean. You can tell he replaced it regularly. Nothing more gross than old oil.
Was thinking the same thing. Must be new oil day or it is changed every day. However, it looks on the colder side, less than 350 F. Maybe as low as 330 F. I find hotter oil gets darker fast, but about 365 F gets the crispiest and least greasy batters IMO.

oil gets darker when it's hotter and gets mixed by flour.
