여기 말고 다른 수제 어묵 집이었는데... 중학생때 학원가는길 시장을 지나야 빨리 가서 음식냄새나도 꼭 지나갈수 밖에 없었는데 그날 어묵을 만드는걸 처음봐서 신기하고 손이 너무 야무지게 움직여서 길중간에서 머리만 돌려서 한---참---- 보고있었는데 아저씨가 "허허 너무 뚫어져라 보면 긴장되 핳핳핳" 정신차리고 가려는데 "하나 맛보고가---!!" "막 튀긴게 진짜 어묵맛이야--!!" 해서 가까이 갔더니 종류별로 하나씩 주셨죠... 세상 그렇게 촉촉하고 쫀득한 어묵이었고ㅠㅠ 생선살 냄새도 너무 맛났고 고소하고 약간 짭짤한게 웃음이 날정도로 맛나서 행복했어요 "간장있으면 좋은데 핳핳핳 그냥 먹어도 맛나지? 핳핳핳" 입에 어묵이 가득차서 고개만 연신 끄덕였어요ㅋㅋㅋㅋㅋ 추억이네요ㅋㄷ

The way the cook slides the knife across the table, knowing just how much fish he needs to flatten before tossing it into the fryer in five seconds is amazing to watch.
Was thinking the same thing. Must be new oil day or it is changed every day. However, it looks on the colder side, less than 350 F. Maybe as low as 330 F. I find hotter oil gets darker fast, but about 365 F gets the crispiest and least greasy batters IMO.
They dont get dark enough to contaminate the oil. Overcooking is what makes dirty oil. These cakes cook rather quickly so that oil probably lasts more than a day. Notice also the stuff hardly gets more than a slight brown on it. Also trap at the bottom of oil takes all sediment away.
@Maria Fernanda....A Cook or a Chef is a person who cooks food. A cooker is an equipment used to cook food (like equipo de cocina in Spanish or attrezzatura da cucina in Italian). So you should not say cooker.

This dude's oil is so clean. You can tell he replaced it regularly. Nothing more gross than old oil.
