Jen, put some of your onion juice in small, medium, & large ice cube trays. Once frozen remove from trays, put in freezer bags! Just pop a few out and add to stews, soups, roasts, gravy, etc. Enjoy!

Your video popped up as I was watching video after video on how to dehydrate caramelized onions. I read a vague blog post but wanted more information. Thank you for clear, concise instructions AND showing what onions should look like when ready to go from slow cooker to dehydrator. My onions are in the dehydrator (overnight) and smell wonderful. Makes me wish I had more than 6 large onions available today. I also watched your barbque sauce video and it sounds just like what a friend makes but she won't share the recipe. And if you think they still look a bit pale, don't be afraid to leave them in the dehydrator a little longer at 135 F. Some onions just naturally darken more than others, but they all taste fantastic. Just got a dehydrator a month ago and have been going a little crazy with it. I've dehydrated garlic, regular onions (thank goodness for low humidity and a garage with windows), celery, kale, apples (and more apples...my husband's favorite), kiwi, zucchini, strawberries, mangoes and papaya. Tomorrow is beef jerky.

For me, it's putting together pantry staples like the onions, garlic, peppers, ect. Yes, onions can be stinky!! And broccoli, it's nice to have it somewhere away from the main part of the house when dehydrating that.

I bought a dehydrator just like this one at my local Goodwill for $15 yesterday and now I want to buy all the onions to caramelize and dehydrate. I LOVE onions and these seem like a lovely snack and topping for casseroles! *P.S., You need to share your onion dip recipe!!!

How or when would you salt the onions? Before or after dehydrating. I've had commercial dehydrated onions (for Green Bean Casserole) and they're salted. I thank you for your recommendation on this. I'm heading to our city farmers market right after posting, to get some onions! Loved your video, very clear instructions and because I'm new at dehydrating, I need that :)
I have never salted them, but I do know that flavours concentrate when dehydrating, so if you decide to do salt them before hand, I would go with a light touch the first time and experiment with each batch until you have it where you want it flavour wise. Jen, I'm sorry to keep bugging you but have you ever dehydrated shredded potatoes? I'd like to try it but not sure if they should be 'blanched' prior to dehydrating or not. Maybe you could do a video about potatoes :) I KNOW you can do it
@@huktonlife for sure!! I usually make a huge batch of thinly sliced dehydrated potatoes in the fall. You do want to blach potatoes before dehydrating, otherwise they turn black and gray. You can still eat them, but they are very unappetizing to look at. I will do up some shredded ones for you soon.
I have some maple balsamic I want try this with and do another one with regualr balsimic since I was told those were more like the taste for the french onion for green bean cassarole.
I have now had my onions in the dehydrator for 18 hrs and they are still soft and not crispy. They are Walla Walla onions which are very juicy so will these ever get crispy or am I just wasting my time trying? They have really good flavor! I used Dark Chocolate Balsamic Vinegar.....yum! Thanks for this video :)
Sometimes things can take ages, it could be the juicy-ness of your walla walls, but humidity can also be a factor (it's super humid where I am in the Maritimes and my fruit leather I have in my dehydrator is taking a lot longer than usual) You may find that some things crisp up when taken out and left to come back to room temperature. You may want to grab an onion slice or 2 from your dehydrator and let them sit out for a bit to see if that's the case. If it is, then you know they are done and can turn it off. Another thing is the temperature of your dehydrator. The general temps used for fruits and veg are 125 to 135 F. So if you have yours on 125, try bumping it up to 135 and see if that helps.

Sorry for the late reply. I don't for a jar that I'm going to be using within say, 6 months or so. But for long term storage, I do have the mason jar attachments for my Food Saver and I will use them for stuff that I'm prepping for my long term pantry.
Properly dehydrated onions stored in an air tight glass jar will be fine for years. However, they may lose a bit of flavour over time. I usually do up enough to have a few jars worth in the pantry, and I use my Food Saver jar attachment to vac seal the ones I plan on leaving for longer term storage.
Sorry for the late reply, the answer is that there isn't a set time. Things like machine, humidity and more all play into how long anything takes to dry. So it could be 3 hrs, or 6, you will only know once you do them.
I haven't, only because I have a dehydrator. You can use your oven on its lowest setting to dehydrate, you will want to crack the door just a smudge for airflow. I find tucking a tea towel between the oven and the door does the trick. I don't know how long it would take to do in the oven. But if you have no baking plans, you could definitely give it a try.
