Why after releasing a turbo you sometimes do to reposition yourself a hop in the opposite direction and sometimes a slide in the opposite direction? Is there any difference ?

Not necessarily in speed, but it makes driving so much easier!

It just helps to realign yourself afterwards. It's good for setting up upcoming drifts or just taking efficient lines.
Once you're comfortable with controlling your kart, it just feels natural.
