Roasted Vegetables - Simple, Fast, Delicious!

  • I swear to you this is the easiest recipe and yet so tasty! Just some good EVOO, some OJ, salt & pepper - and you have a healthy side dish for any meal at anytime of day.
    Pick your favorite vegetables, cut them into small slices/chunks - and make sure you're putting veggies that take the same amount of time to cook together. You'll see in this video, I cooked the root veggies for a 1/2 hour before adding the more delicate (and faster roasting) broccoli and cauliflower. I roasted them at 375 degrees F - but cook time should be adjusted based on whether you like your veggies a bit crunchy or soft. As my favorite chef Emeril Lagasse says, you're not going to hurt my feelings.
    So experiment with the veggies you like and the timing that brings them to the texture you prefer. And, as always, flavor to taste. The most important thing is that you ENJOY a very healthy side dish!
