How to make simple and delicious dumplings with zucchinis (hobak mandu, 호박만두).

  • These simple dumplings made with zucchinis are a summer favorite in Korea! They are called hobak mandu (호박 만두) or hobak pyeonsu (호박편수). So easy to make, guys! The best part of it is the nice and clean taste which allows you to simply savor the natural flavor of the sweet summer zucchinis. The mushrooms complement the zucchini with a bit of earthy flavor and meaty texture. You can make it vegan, or add some meat of your choice. Enjoy!!

    Ingredients:
    2 zucchinis (about 10 ounces each)
    salt
    2 dried shiitake mushrooms (pyogo beoseot, 표고버섯), rehydrated -- use 4 if not using meat
    4 ounces ground beef (or pork or chicken)
    2 teaspoons soy sauce
    1/2 teaspoon sugar
    1 teaspoon sesame oil
    1/2 teaspoon garlic
    pinch pepper
    1 pack dumpling wrappers
    Dipping sauce
    1 tablespoon soy sauce
    1 tablespoon water
    1 teaspoon vinegar (adjust to taste)
    1/2 teaspoon sugar (adjust to taste)

    My next door neighbors are vegan and keep giving me zucchini. I think it's time to take them a treat!

    I stumbled upon on your website when I was googling spicy cucumber salad. Then I subscribed to your RUclips channel. I recently bought the bamboo steamer thinking I will make some vegetarian dumplings. I am sure going to try this recipe without meat. Looks very easy to make and sounds delicious.     U don't need that extra step to cool down dumplings in cold water. They taste better warm.
