Have made this several times. You don't need this much chicken for the soup. Just bake up some thighs or breasts and take it off the bone. Follow the recipe other than that...it is really delicious! Thank you Laura!!
Peggy Riley I agree. Maybe a package of boneless thighs and a breast is enough chicken. However, the whole roasted chicken looked so yummy, I want to do one. 😜
I was told years ago to skim the grease from soup, take some paper towel and lay a sheet on top of the soup and it absorbs the grease. It works wonderful When you skim it using a spoon or ladle, your removing a lot of the soup but the paper towel absorbs only the grease. I use this method all the time.
Paper towels absorb water when you’re cleaning up, etc so I don’t see how that can be true. You’re definitely absorbing the broth at the same time. I believe the thinking is the grease layer is on top of the soup so you’re absorbing that but you can see in the video it collects to the outside and the broth is in the middle.

I've watched almost all the chicken noodle soup recipes on RUclips and you to me have the best one. All the others either didn't season properly or did things backwards lol. This recipe was so yummy!

If you're going to braise it for 3 hours, might as well just throw in some bones/ thigh/ drumsticks and do a stock with water. It's what i did last night and it tasted fabulous.

Laura I made this chicken noodle soup today. I followed the recipe exactly. It is absolutely so delicious. My whole family loved it. It is a winner in our house.
You can cook the noodles with plain water to the right point and rinse it through cool water from to keep them from overcooking (add a little bit cooking oil to prevent sticking when drying). To serve, preheat cooked noodles in microwave (if you want to have a really hot soup) and pour hot soup over them. That's the way asian people cook noodle soup at home.

Hi Laura. I was a little late in finding this recipe. I made it yesterday with a few changes. I put my roasted chicken in my pressure cooker with sauteed veggies and cooked for about 5 minutes. It was so good with ditalini pasta and a sprinkle of parmesan cheese of course.

Peace Serves 6 to 8 Prep time: 10 mins Cook time: 4 hrs Ingredients: 1 (3 ½ lb) Whole Chicken, rinsed under cold water and dried (make sure the giblets bag is removed) 3 Tbsp of Olive Oil 1 Large Yellow Onion, chopped 3 Large Carrots, peeled and chopped 3 Stalks of Celery, chopped 2 Cloves of Garlic, minced 12 cups of Chicken Stock 1 Tbsp of Poultry Seasoning ¼ cup of Chopped Parsley ¾ cup of White Wine 2 ½ cups of Wide Egg Noodles 1 4”Piece of Fresh Rosemary Salt and Pepper, to taste Process,1) Heat the oven to 425 degrees. Drizzle a tiny bit of oil in the bottom of a roasting pan, add the chicken to the roasting pan, drizzle a little oil over the top, season with salt and pepper and place the piece of rosemary in the cavity. 2) Roast the chicken for 1 1/2 hours. 3) In a large heavy duty pot, add 2 Tbsp of the oil and let it preheat over medium heat, add the onions, celery and carrots and season lightly with salt and pepper. Cook the veggies until softened, about 5 to 7 minutes. Add the garlic and cook for an additional 30 seconds. 4) Add the poultry seasoning and cook it stirring constantly for about 10 seconds, add the wine and let it reduce for just a few seconds. 5) Add the roasted chicken to the pot with the veggies, cover with the chicken stock and sprinkle in the parsley, bring to a boil and cover the pot partially and lower the heat to low. 6) Allow the soup to cook for 3 ½ hours. 7) Remove the chicken onto a plate and let it cool slightly. Meanwhile, with a ladle, skim off as much of the fat as possible from the soup base and discard. 8) Once the chicken is cooled enough to handle, discard the skin and shred all the meat. 9) Add the meat to the soup base, increase the heat to medium high and bring the soup to a rolling boil. 10) Add the noodles and cook them according to packaged instructions. I tried this recipe and it was just divine! I used a pre-cooked rotisserie chicken and used water instead of chicken stock. I ate two big bowlfuls (it was so good) and also put some away in the freezer. Am having one more bowl tonight for dinner. Two thumbs up for Laura!

If you are going through all of the trouble and expense of using a whole chicken.....Why the heck would you use yucky make believe broth from a container??? if simmering a whole chicken for 3 effin hours dont get you a great broth........and not using the chicken skin is just plain sinful Who dont love chicken skin? Great recipe Laura, I made this last night and the family loved it! Used just a regular super market chicken and it worked out fine. I wouldn't change a thing except leaving the rosemary sprig out, as there is rosemary already in the poultry seasoning.

That looks awesome... I do my chicken soup almost the same way. I like to add a little bit of liquid smoke and some Chipotle Tabasco Sauce just to give it a little bit of a smokey flavour. Love all your recipes...

I have to confess though that I have improvised a little, I used a store bought roasted chicken and didn't have pasta on hand so I used rice noodles. The falvours where still great, I will try the recipe from scratch when I have more time.
Used a small rotisserie chicken and swapped orzo for the egg noodles. Also added some fresh lemon, BEST SOUP IVE EVER HAD! & this was my first time making chicken noodle, thank you Laura 💕

What a waste of chicken wouldn't it be better to only use just chicken breasts instead of a whole chicken ....

That looks awesome... I do my chicken soup almost the same way. I like to add a little bit of liquid smoke and some Chipotle Tabasco Sauce just to give it a little bit of a smokey flavour. Love all your recipes...

This looks so good! I never thought about roasting the chicken first usually we just boiled it and went from there, but I love this idea and look forward to trying this recipe! Thanks for sharing!
My whole family loved this recipe Laura, thank you for sharing. I have to confess though that I have improvised a little, I used a store bought roasted chicken and didn't have pasta on hand so I used rice noodles. The falvours where still great, I will try the recipe from scratch when I have more time.

Used a small rotisserie chicken and swapped orzo for the egg noodles. Also added some fresh lemon, BEST SOUP IVE EVER HAD! & this was my first time making chicken noodle, thank you Laura 💕
