    I like my potato skins crisp. I coat the potato with light oil and put garlic salt on them.
    They come out nice and crisp and have awesome taste.

      This isn't potato skins, this is twice baked potatoes. There's a difference. She did a potato skin recipe about a year before this one.

      Yes I know. I put coat oil and garlic salt on all potatoes I put in the oven. For baked or stuffed or skins. Makes the outer shell crisp and flavourful.

      That sounds so damn good, do you put the oil and garlic salt at the beginning before cooking them or after with the cheese and everything when you put it in the oven the 2nd time ?

    My take on Twice Bakes. Benn makin em this way for 35 years...
    Take those potatoes, poke a lot of holes in the skin with a fork, rub down with bacon grease, salt, and pepper. Wrap in foil and bake at 375 for 1 hour. Pull and let cool to room temp.
    Scoop the core to the edge of the skin, Mix taters with Kewpie (Japanese mayo), sour cream, a splash of heavy cream, CHIVES (a lot), sautéed garlic, applewood smoked cheddar and applewood smoked gruyere (a lot and mix all the cheese in, no need for topping). salt, pepper (I use a 4 peppercorn blend). And a boat load of bacon. For those who want to kick it up, add some diced chipotles...
    Bake at 300 until top is golden brown. You'll never go back once you've tried this...

      I think she should. There's really no difference between what she's doing and what say Rachel Ray does. I'd love to see this happen for her and Joe. I've been watching their Vlog videos and I love their lives and the advice Laura gives.

    Hi Laura, I liked your recipe lots! I make a really good twiced baked potato as well. I do make my mash a bit chunkier and in addition to your same ingrediants I add cream cheese to the recipe as well. It lends a silky creamy flavor as well as Parsley and a bit of fresh Garlic into the mash. On top I add the cheese as u do and a few extra cooked bacon pieces too. I love all of your cooking videos and show! Thank you for sharing with all of us home cooks!

    Laura is right about this; these twice-baked potatoes are indeed DIVINE.
    I followed the recipe exactly, except I cut down on the baking time by microwaving the potatoes (making sure to prick to allow them to steam) for 6 minutes, then letting them crisp up in the oven for 20-30 minutes.

      Chef Johns is just an assembly not a recipe, as he states. Put what ever you want in the potatoes.
      Myself, if I was mashing potatoes, I would put in hot milk, but we're not really making mashed potatoes, we're making chunky potatoes to be re-baked.

    Hey Laura I love this recipe. I also will suggest for anyone that doesn't want to use bacon...I didn't use milk and in its place I used a mixture of truffle butter and truffle oil and added fresh thyme and grated parmesan. Dear god did it come out awesome.

      +cindylopez67 Instead of onions,use chopped chives.They don't need a lot of cooking and have a mild onion flavor.I think you will love it.

    Have you tried marble potatoes. Boil it. Make dressing with evaporated milk, mustard, sugar salt and pepper.
    Cut potatoes in half. Mix together with dressing. Refrigerate until serving. Can keep in the refrigerator for days. Anyway, I love to try your twice baked potatoes recipe. I love watching you.

    I think because the cheddar, sour cream and bacon already add a heaviness so milk is a nice balance.
    Also, Laura mentioned in the shepard's pie video that she makes mashed potatoes kind of runny because when it bakes it dries out and it'll comes out perfect in the end (and milk helps make them more runny than cream would).

    My favorite potato is potato dauphinoise.
    I make mine with thyme, garlic, parmesan, sardines , red onion, water and cream. So so so sooo yummy!! Lots of love from Sweden xxx

    To claify, what we do is bake the potatoes first till they are nice and soft inside. Then we slice them open and scoop out the inside of the potatoe. Then in a bowl we mix the potatoe, cheese, sour cream, onions, and cooked bacon. Then we pour in enough blue cheese dressing to give everything a nice coat over. Then you use a spoon and scoop up the mixture and put it back in the potatoes and back them again till the outside is nice and crispy. They are AMAZING!

    I love these, I cooked my potatoes first in water, poked the potato all around with fork, so they cook faster and then half them, etc. The same process except I didn't use oven for the cooking the potato, is more economic, less time to cook them, less electricity, I only put them in oven for the end, to get the crispiness. They are delicious, thank you.

    Laura is a great chef, but everything she makes is not for eating everyday because she adds a ton of fat and calories in each dish. She should try making more savory but healthy dishes, so that people can make it for a weekday's dinner, rather than a one time indulgence

    I´m from holland and I love 'stampot' for the winter.. It is like the massup potatoes here but then with a kind of green veggies in it.. Or carrots with union (hutspot) but you can use sprouts, kale. endive, sour crout.. and go on

    im from england, and i make these, when i mash the potatoes i put garlic butter and milk into them, and a large scoop of philly cheese with chives chopped cherry tomatoes diced red onion and mature cheddar and sweetcorn into the mixture, topped with more cheddar and sliced tomatoe, nom nom they are lovely, i serve them with southern fried chicken and roast tomatoes

    hi Laura, I started making these awhile back, and I swear if my mother had made them, I may have eaten my potatos when I was young, plain potatoes were never a favorite of mine.
    But I love these! And I love the bacon idea, I usually use cooked chopped broccoli.
    You might want to try brushing the potato skins(outside) with olive oil, if you like to have really crispy skins! Ciao!

    Twice-Baked Potatoes are so wonderful and versatile. The neutral flavor of potatoes allows them to marry with almost any other savory sauce, pesto, nut butter, miso etc. I like using Homemade Traditional Pesto/Cilantro Pesto, Mushroom Ketchup or whatever savory combination of ingredients that would compliment the potato. I like to eat the inside of Twice-Baked Potatoes first, and then add a tablespoon of salsa along with a dash of hot sauce to the leftover skin (which hopefully is nice and crispy) and eat it like a crispy potato taco. Thanks, Laura, for the tip on not removing all of the flesh from the potato in order for the potato to hold itself together.

    I like twice baked potatoes!! Wow what a great mixture to go on the potato and it looks delicious. I love making mashed potatoes and I make enough so I can put them in a casserole dish. I make a cheese and crust on top and I have a potato casserole that's delicious. Thank you Laura.

    hi, I make these, I like to use cooked chopped broccoli in them! I use a recipe that has both a vegetarian version, and one that uses cooked chopped chicken. And instead of sour cream, it calls for ranch dressing. Also onion instead of scallions. I don't used a lot of milk, if any, you can make them as wet as you prefer.......one thing I would definitely recommend, is brushing the potato skins, the outside, with olive oil. It makes the skins nice and crispy!

    Hey Laura . I like to boil up some whole potato till soft and cut it into 1-2 inch slice and using a melon scooper scoop out a part of its flesh like a egg without its yolk . And use the remaing potato to make mash potato . And using a piping bag with a star tip pipe the mash potato into the hole which u scooped and bake it till brown it will look like mini meringue potato

    thank you for the advice about the cold milk! lifesaver. I always use cream cheese instead of sour cream in my twice baked potatoes, so yummy.

    WOW! I have just recently downloaded a simpler (easy to make recipe) for stuffed jacket potatoes, but having now seen yours, my mouth is watering. I am a confessed carbohydrate 'nut' and can't wait to try out what seems like a wonderful taste treat! Thank you for sharing. Ed

    OMG soooooooo loved your twice baked potatoe just got a chance to make them for my family and they loved it thank you sooooo much for such a fun and easy way to make food for all ages. Lol my son would like me to tell u that he loves you lol he watches your shows all the time with me. So again thanks for everything you do so amazing.

    correction: my recipe uses 1 finely chopped onion, fried on medium heat in a bit of oil, until soft and transparent. And don't be afraid to add the bit of oil too, that they fried in, it carries all the flavor(and is not as fatty as bacon&bacon fat so it is nothing to worry about, probably use 2 tablespoons for this size of recipe) good luck, it is such a yummy dish :)

    I love the skin as well. Before you put mixture back in the troughs dab veg oil onto the skin then put a table spoon seasoning salt onto plate and roll potato skins around till its covered. Broil the skins in broiler for a few minutes for crispiness, then fill the troughs. You don't have to do this to all the troughs if your friends don't eat the skin. You're a keeper..

    I have never had twice baked potatoes always fearing it was too complicated & a lot of work. But you made it look so easy to make, with a lot less ingredients to use. And believe me half of a twice baked potato is a meal in itself. I only cooked two whole potatoes, that equals 4 halves. Well Laura needless to say I love food and I ate and I'm giggling here, I ate 3 halves wonderful & delicious meal. I could not another bite. The 4th half I saved for the next day as lunch.

    my favorite meal my mom makes on my birthday, it is sausage and clams--It is onions, garlic,breakfast sausage.sliced potaoes and minced clams one pot dish so delicious
