Thank you so much, this is delicious! I appreciate you pointing out that traditional is better way to describe dishes than "authentic", which is hard to define. I think people sometimes imply that dishes that are not "authentic" are not good or worth eating. It is nice to see you highlight the history of orange chicken.

Thank you for another wonderful recipe. Instead of fresh oranges, I use orange juice and Korean citron jam. Korean citron jam makes the orange flavor stronger and more complex with its slightly bitter peel in it. Since 50% of the citron jam is sugar, you will need to adjust the sugar quantity in the recipe accordingly. Korean citron jam is wonderful for making sweet tea, hot or cold. You won't find a jar of Korean citron jam wasted.

The sauce, I had to change a little to get the flavors as my oranges weren’t as sweet. Put some honey in it and it worked. The sauce is the trickiest part, but my husband helped with taste testing before adding to chicken. Thank you! We will be making this a lot.

Wow this looks really amazing better then P.E. If I want to make a big amount of orange chicken, should I fry 2 times first, then put into freezer or refrigerator? What should I do after I take out from the freezer/frig how long I should fry?

What kind of oil do you use? I've looked at several of your wonderful recipes, but I always see oil, but not what kind? Can you tell me what oil you used here? Thank you so much!
