Just a couple of questions. 1. Wouldn't it be less messy to use your food processor to mix the sugar and molasses? I don't know about you, but I would much rather wash a spoon or food processor than get my hands all sticky. 2. You do know that you can dehydrate these sugars right? I prefer the taste of brown sugar, but it is inconvenient to use as a white sugar substitute when it's moist like that. If you dry it out it makes it easier to use. I discovered this when the brown sugar I bought in bulk dried into a big hard lump. I grated the chunk of sugar and was rewarded with a brown sugar that sprinkled and measured like white sugar, I've been doing that intentionally ever since.

If you lightly oil your measuring spoon before measuring out molasses or other thick syrups like corn syrup it will pour straight out of your spoon without sticking.

Oh my goodness!! That sounds delicious!! I am a coffee drinker and I am going to try that tomorrow morning. When I was a child, every evening before I brushed my teeth to get ready for bed, my mom would give me a small glass of whole milk with a teaspoon of molasses stirred in to it. She always wanted to make sure I had enough iron. She took such good care of me. Now as an adult, I love molasses too! Love, Mary
Kurt M. That is also good. I live in the UP of Michigan on the Canadian border we also use syrup in our coffee the best is the B grade the darker richer syrup you get off the last of the sap.

Thank you SO much, Mary! One tip I've heard to keep brown sugar moist is a piece of untreated terracotta that is soaked in water for about 10 minutes and patted dry. The sugar bear product of this is about 5 dollars, but an untreated piece of terracotta would be cheaper than that I imagine. -Clinton

Love your videos!! Your brown sugars are the homemade versions of those found in the U.S. I also like using brown sugar similar to that found in Europe, which has no molasses in it. Would love to see that one made too. Thank you for all your lessons.

Hi Mary, Thank you sharing your videos with us and your expertise on how to do things. Here is my concern regarding adding a piece of white bread to the sugars when storing and maybe you could help enlighten me on this. I live in the rainforest in Costa Rica and we are very wet here. We don't leave bread, spices, flours (not too long) out due to mold. Everything is kept in the refrigerator or you only purchase small amounts at a time (which I prefer to buy in bulk). I make my own sourdough bread (since I make my own butter, I freeze the whey for bread), can I use the sourdough bread and should I be concerned about when I seal the jar with my food saver, will my bread inside the sugar mold? I know I could try it myself and see but who wants to waste the delicious brown sugar when I have a person that seems to be on top of storing foods :) .

Hi Tina, that’s a great question. I don’t have a video on that. But that’s a great idea. I should show folks how to do that. It’s actually very easy. You can do it in an oven or in a dehydrator. You need to spread some out in a very shallow bowl or on some parchment paper you’ve clipped the sides together with binder clips. Then in an oven on the lowest temp you can go with your electric oven and then a very low setting or in your dehydrator...and over time it will dry out and become crystallized. Then you just grind it up and then you have maple sugar. I’ll definitely do a video on this. Thanks for the inspiration. Love, Mary❤️😘❤️

Brilliant Mary! Thanks so much. I think I’ll just add the molasses to the sugar when I need it. I use to add a tablespoon of black strap molasses to tomato sauces or ratatouille. It just added a bit of sweetness and depth. That was when I lived in the USA . Now my fridge is full of ferments!

Hi Mary, another great video, thank you. I have a question for you. I adore molasses, however I don't go through it real fast. I find no best by/ expiration date on the bottles. Looking up information for that is so varied. Would you know how long molasses is good for? Thank you in advance.

I do this with my splenda if i need it .taste just like brown suger .I started buying molasses anyway cause i was aminic .But im um at a certian stage right now if u know what i mean?so i use itfor this mostly now .but for peeps that dont know great vid thanks Mary.

Hi Valerie, I understand completely. I had to experiment a number of times until I got the consistency correct! LOL! A sticky wicket is a very old-fashioned expression for a bit of a difficult situation. I believe it’s British. My great grandmother was from England. I hope it gives you a little laugh. Hi Mary....when you put the bread in the sugar do you have to change it every so often....will it get mouldy ....or is it once and done....also do you just lay it on top of the sugar....thank you❤
Great question. You can put the bread anywhere. You can submerge it a little into the sugar or just put it on top. It will absorb a lot of moisture. Check on it periodically. It’s unlikely to mold but it does become stale. But it does take awhile. If you notice that it’s starting to stale, you can replace it. Hope this helps. Love, Mary
I rarely use brown sugar so I'll just make it as I need it. Mom dropped off some mangoes and a few bananas. Daniel's teacher for both Extended School Year and this coming regular school year when he'll enter Middle School called to tell me to pick up his Extended School Year packet which is likely similar to the one I had to pick up the last two months of this past regular school year on the 12th at the school board. Also will be using the same few online programs we can access on his tablet. He will regress too much during the long Summer break if he doesn't do the Summer program which is usually in the middle of the break.
Unfortunately there is no packed brown sugar where I live, so I wanted to make my own. Is the white sugar you used made from sugar beets or sugar cane?

Just a couple of questions.
1. Wouldn't it be less messy to use your food processor to mix the sugar and molasses? I don't know about you, but I would much rather wash a spoon or food processor than get my hands all sticky.
2. You do know that you can dehydrate these sugars right? I prefer the taste of brown sugar, but it is inconvenient to use as a white sugar substitute when it's moist like that. If you dry it out it makes it easier to use. I discovered this when the brown sugar I bought in bulk dried into a big hard lump. I grated the chunk of sugar and was rewarded with a brown sugar that sprinkled and measured like white sugar, I've been doing that intentionally ever since.

If you lightly oil your measuring spoon before measuring out molasses or other thick syrups like corn syrup it will pour straight out of your spoon without sticking.
I had no idea how easy that was! I can't believe that it took me 52 years to learn this. LOL

When I was a child, every evening before I brushed my teeth to get ready for bed, my mom would give me a small glass of whole milk with a teaspoon of molasses stirred in to it. Kurt M. That is also good. I live in the UP of Michigan on the Canadian border we also use syrup in our coffee the best is the B grade the darker richer syrup you get off the last of the sap.

Thank you SO much, Mary! One tip I've heard to keep brown sugar moist is a piece of untreated terracotta that is soaked in water for about 10 minutes and patted dry. The sugar bear product of this is about 5 dollars, but an untreated piece of terracotta would be cheaper than that I imagine.

Hi Mary, Thank you sharing your videos with us and your expertise on how to do things. Here is my concern regarding adding a piece of white bread to the sugars when storing and maybe you could help enlighten me on this.
I live in the rainforest in Costa Rica and we are very wet here. We don't leave bread, spices, flours (not too long) out due to mold. Everything is kept in the refrigerator or you only purchase small amounts at a time (which I prefer to buy in bulk). I make my own sourdough bread (since I make my own butter, I freeze the whey for bread), can I use the sourdough bread and should I be concerned about when I seal the jar with my food saver, will my bread inside the sugar mold? I know I could try it myself and see but who wants to waste the delicious brown sugar when I have a person that seems to be on top of storing foods :) .

Hi Tina, that’s a great question. I don’t have a video on that. But that’s a great idea. I should show folks how to do that. It’s actually very easy. You can do it in an oven or in a dehydrator. You need to spread some out in a very shallow bowl or on some parchment paper you’ve clipped the sides together with binder clips. Then in an oven on the lowest temp you can go with your electric oven and then a very low setting or in your dehydrator...and over time it will dry out and become crystallized. Then you just grind it up and then you have maple sugar. I’ll definitely do a video on this. Thanks for the inspiration. Love, Mary❤️😘❤️

have you ever tried using a dehydrator to remove some of the moisture from Sucanat substitute or maybe a slow oven? if not do you think it would work?

Brilliant Mary! Thanks so much. I think I’ll just add the molasses to the sugar when I need it. I use to add a tablespoon of black strap molasses to tomato sauces or ratatouille. It just added a bit of sweetness and depth. That was when I lived in the USA . Now my fridge is full of ferments!

Hi Valerie, I understand completely. I had to experiment a number of times until I got the consistency correct! LOL! A sticky wicket is a very old-fashioned expression for a bit of a difficult situation. I believe it’s British. My great grandmother was from England. I hope it gives you a little laugh. Hi Mary....when you put the bread in the sugar do you have to change it every so often....will it get mouldy ....or is it once and done....also do you just lay it on top of the sugar....thank you❤
Great question. You can put the bread anywhere. You can submerge it a little into the sugar or just put it on top. It will absorb a lot of moisture. Check on it periodically. It’s unlikely to mold but it does become stale. But it does take awhile. If you notice that it’s starting to stale, you can replace it. Hope this helps. Love, Mary

I rarely use brown sugar so I'll just make it as I need it. Mom dropped off some mangoes and a few bananas. Daniel's teacher for both Extended School Year and this coming regular school year when he'll enter Middle School called to tell me to pick up his Extended School Year packet which is likely similar to the one I had to pick up the last two months of this past regular school year on the 12th at the school board. Also will be using the same few online programs we can access on his tablet. He will regress too much during the long Summer break if he doesn't do the Summer program which is usually in the middle of the break.
if you oil or spray your spoon with oil it will slide off real easy!! I do this with honey.
