    Good morning! I filmed this video before the pantry challenge. I then wanted the pantry challenge videos to go out in order so I never published this one. I know it's a little late in winter for a soup video but I hope you still enjoy it! We have snow here today and I am heading out into the grow room to plant some seedlings!       Did you hear that Panera had a Broccoli Cheddar Cheese Mac n Cheese? It was awesome but for some reason they took it off the menu. Limited time Special.
      But for questions: frozen onions and celery cooks fine when recipes need it?
      Also, if you only have frozen spinach would that work in the first recipe? ( I want to make it this Sunday)
      And do you blanch veggies like the broccoli before freezing it?
      Also does freeze dried cilantro work well in fresh salsa/pico de gallo?
      Sorry for all the questions.
      You really do inspire me to try new things and preserving items I get at the farmers markets.

      Oh my! There is NOTHING better than a delicious hot soup to warm you through during the cold, wet, dreary Pacific Northwest winters. All of these soups look and sound absolutely divine. Can't wait to try them!

    Becky, my mom was known throughout our community for her chicken and dumplings. Her dumplings were light and fluffy and her soup always thick and delicious. I could never understand how her soup had such a nice yellow broth. I thought it was because of the fresh fat hens that she used. Finally I asked her one day and she told me her secret to that beautiful broth. About 5 minutes before the soup was ready to serve, she would add a few drops of yellow food coloring to the broth. It gave the perception of that rich, thick chicken flavor and everyone just loved it. Mom’s been gone a few years now and her secret went to the grave with her. But last summer when I visited my brother in Virginia, we talked about her chicken and dumplings. He said he had been trying to replicate her recipe for years, but just could not figure out how she got her broth so creamy and yellow. When I told him mom’s secret ingredient, we both really laughed. Sometimes it’s those little things that turn a recipe from good to fabulous. So now you know the rest of the story.💕💕.     BECKY….So because of your pantry challenge in January I cooked out my freezer .
    Getting ready for knee surgery , I did three days filling and prepping to fill it again. I knew I wouldn’t be cooking .
    Soooo you’ll love this . I also inventoried each shelf and made a menu plan for all the food .
    Three weeks later I am doing very well with recovery and my husband is
    doing a great job preparing our meals !!
    Who would have guessed that pantry challenge would have been sooooo helpful
    I will recover and start prepping for his shoulder replacement surgery the end of March where I’ll just assemble dinner also !!
    Who would have guessed this challenge would end up like that!
    No take out and saved a bundle of money!!

    Becky I was watching some of your soup recipes. I was a nurse before I retired. A nurse I worked with was an RN, a Chaplin and had done missionary work in Africa. This is her recipe for “African Ground Nut Stew” aka peanut butter soup. It was absolutely delicious.
    Just wanted to pass it on. I’m a soup fan so the more the merrier!
    AFRICAN GROUND NUT STEW
    (Peanut Butter Soup)
    1 chicken
    1 large onion
    salt and pepper to taste
    1 c. canned tomatoes
    ground red pepper (I add about ½
    (approximately)
    tsp.)
    1 c. peanut butter (approximately)
    Boil the chicken (cover with water to make broth). Cook the onion with this. When chicken is done, take out. Add the tomatoes and blend. Salt and pepper to taste. May add ground red pepper.
    Add the peanut butter (blend with some of the broth). Simmer for 30 minutes to 1 hour. Add chicken back (I debone). Heat and serve over rice.
    For the European version, serve some of the following side dishes (about 9) putting small amounts of these on the Ground Nut Stew and rice.
    boiled egg fried okra
    onion (sauteed or raw)
    orange
    coconut (plain or toasted)
    pineapple chunks tomatoes, cut up diced banana roasted peanuts
    grapefruit

    Thanks for the extra video , I don’t know what it is about you, because I don’t enjoy cooking I know nothing about gardening but I literally can’t tell you how many times I’ve watched each of your videos, I watch your videos every single night. I don’t know what it is about your videos or you that I just really enjoy watching 🙂 I’m not complaining at all, I obviously enjoy what you do because every single night I’ll at least watch 4 to 5 videos before I go to sleep.. all that being said thank you for all the work you put into your videos.

    You use miropoix and in Puerto Rico we use sofrito. It's cilantro, green bell peppers, onions and garlic. That's what we usually start all our meals with. We put it in a blender (with a little water to help it start blending) and make a thick green mixture. We put a couple of tablespoons with some oil in our pans and cook it up before we add any other ingredient. It's a time saver for us and we usually make enough to last a couple of weeks(like maybe a couple of pints). It's very good when making any Spanish or Latino recipes!❤

    With dumplings you can drop them in the hot simmering soup (if it is boiling the dumplings will break apart when cooking) using two large spoons but if you dip one of the spoons in the hot liquid then scoop out your dough the dough won't stick to the spoon. If the recipe says 12-15 minutes go for the longer time and DO NOT lift the lid until the time is up. Your dumplings need the steam and if you lift the lid your dumplings will not turn out. In our house we would use Knorr vegetable soup mix and make a double batch of dumplings . We didn't care if there was meat we all just liked dumplings. We had a rule if there was a pot with a lid and a pot holder you were NOT allowed to lift the lid. We had some snoopy lid lifters and more than one dinner was messed with so there had to be rules.

      My mom’s recipe was a fav in our family. This was a rule for all of us…do NOT lift that lid until 15 minutes were up! They are always light, fluffy and delicious! Now I’m known for my chicken and dumplings but mine is much more seasoned and with heat from red pepper flakes…yum! 🍜

    I’m part Greek, and my mom used to make Avgolemono soup when I was a kid. It’s almost identical to the lemon orzo soup you made but has rice. I like the idea of orzo instead of rice, because it doesn’t get as mushy. I’m going to try this recipe. Thanks!

    I double or triple my soup recipes. Any left over I pour in my freeze dryer trays and freeze dry. Then powder it up and put in mason jars and vacuum seal. Easy to pull a bottle off the pantry shelves for times when there is no time to vook

    Becky, I could literally watch your podcast for hours hours. I already have watched your podcast for hours and hours. I am 75 years old, have cooked my entire life. At age 12 I made cream puffs for my daddy who was in the hospital. However, I just want to thank you for encouraging me to keep cooking even though I’m getting older. It’s so much easier to just go out and get food already prepared. I just want to utilize the things that are in my freezer like you do and make healthier meals. Thank you so much Becky you’ve been an inspiration to me. I even want to have a garden in the backyard. However, my problem is is that my neighbor has a rabbit that likes to camp out in our yard and it’s tough to plant anything in the ground so if I want any produce at my house out the garden I’m gonna have to have raised beds with little fences around them. Bunnies love all kinds of stuff as you let us know when we got to go into your garden. Blessings to you and your family.

    I love chicken and dumplings! I use my Grandmothers method when adding the dumpling batter. 10 minutes uncovered for lightness and 10 minutes covered for doneness. Hasn't failed me yet! ❤❤

    So I don't know if this is also a staple in other cuisines but in Greek cuisine the egg and lemon in the soup is a technic to give body to a soup called "avgolemono", you can check a lot of recipes with that. I suggest the chicken variety and the rice and meatball one.

    Fluffy dumplings are easy if you use your biscuit recipe. The old Joy of Cooking cookbook has a great biscuit recipe for this. Another tip is to make the dumplings small so that they are bite size in the bowl. I used to make them bigger and we decided small is best. Pure comfort food. ❤

    My husband is the chicken and dumpling expert in our house. He puts sage in his and even mixes some ground sage in with the home made dumplings. He’s also made extra dumpling dough and wrapped it with plastic in the fridge so we can have fresh dumplings in the leftover soup.

    I sauté celery, onion and carrots and freeze it in flat ziplock bags. Really cuts down the cook time for week night soups. I just break of as much of the mix as I need for the meal.

    The peanut and sweet potato soup, is traditionally made with kale and the spices and herbs are often sweated in the peanut butter. It toasts the peanut butter giving a fuller more rounded flavour then add the tomatoes, followed by the potatoes, then add the beans and kale.

      @@helgardhossain9038 it is, most people who try it like it. It’s a staple in Africa, most of our dishes stare with tomatoes, onion and kale, or rape. Peanut butter, is something that is normally on hand to flavour foods, serve as butter etc as ground nuts (known locally as monkey nuts) are easily ground into peanut butter in its purest form, nothing but nuts. 🥜 soak them in water overnight, then roast.

    I made chicken and dumplings this past week and something I’ve always done while cooking the dumplings is to wrap the cover of the Dutch oven with a kitchen towel to help absorb the moisture from the lid and keep the dumplings nice and fluffy.

    A few years back a neighbour gave us a ton on celery. It was quite a dark green and really strong flavoured. I pulverised the stalks in theblender & made celery soup for the freezer. On thawing i added sour cream & chilli flakes. It was so yummy. The leaves I dried then ground to a powder. I add it to soups, stews, casseroles, & pizzas

    Celery, onions, peppers, carrots blend I bought yesterday at Walmart. Figured they would be wonderful for a vegetable soup with greens of choice and meat of choice. Make sure to season well.

    These all look so good! The dumplings look so good and fluffy but I’m intrigued about the cake flour. I was taught that if I don’t have cake flour I should sub all purpose replacing about 2 tbsp per cup with cornstarch and I might try them that way to see how fluffy they can get!

    When I was a kid I'd watch Jeff Smith- The Frugal Gourmet on PBS. I loved that show. He would make a soup with peanut and sweet potato. It sounded weird to me then. Now that I see it as an adult, it looks so delicious! Thank you for this! Look up the frugal gourmet if you have a chance. You'll appreciate him.

    Growing up my Mom never made chicken and dumplings. She made lots of other soups many pots of gumbo. I’ve only had it once and was not impressed. I think it was the dumplings. They were very dense. Now I am intrigued by this recipe. A friend of mine loves dumplings so I have to try it. Much ❤ and thank you for sharing.

    I have been watching your channel for a couple of years now. Today I decided to make homemade beef broth. So my question how long can you keep in fridge? I will freeze some but want to keep in fridge as well. I’m also starting a little garden as well. I’m going to try potatoes, tomatoes, squash, cucumber and different kinds of peppers.

      To keep it longer in the fridge i pour it hot into jars and close the lids. Let them cool and then stick them in the fridge. It creates a vacuum and it keeps the food longer. I always hear them pop in the first hour.

    I like to freeze leftover soup in freezer bags. Freeze flat. “File” in my freezer, then if I’m sick also, I can warm up a homemade soup.
    I need to try that black bean soup!

    We love broccoli cheddar soup at our house. I always make a double batch and then freeze the leftovers! It reheats beautifully!

    I recently started chopping the whole garlic and I freeze portions in an ice cube tray. Makes it easy to pop out a portion each time as necessary.

    With the broccoli and cheese soup, I like to add a half a cup of uncooked rice or a cup and a half of cooked rice and take baguettes. Slice some thin toast with butter and a little garlic and it makes a delicious hearty meal on a really cold day, thanks Ms Becky. Have a good day.

    I’ve been making soup each week for my lunch since January with the pantry challenge. Homemade chicken stock & some home grown veggies, so fun. Thank Becky for some new ideas to finish out the winter, early spring. The sweet potato with peanut butter is a must try.

    Hey, Becky! Just thought I’d share my recipe for the dumplings in my own chicken and dumplings!
    2 cups flour
    1 T plus 1t baking powder
    1 t salt
    1 t pepper
    1 t garlic powder
    2 t Italian seasoning
    3/4 cup whole milk
    4 T butter, melted
    Makes a wetter dough, more like a batter that is easy to scoop with cookie scoop into the soup!

    Mother made the best soup in the world. It was one of our favorite meals. Soup and her corn bread. I had a friend every time I asked her if she wanted to spend the night she always asked if Mom was making soup. I told her I don't know but I bet she will fit you. Mom always made soup for my friend. ❤

    I just love soups. Could eat them year round. In the summer I like more broth based soups, as they are lighter. Heavy soups are comforting in the winter.

      Also, her gingerbread house showed up on the shelf. But the soups look good and I can eat soup all year long. I've made African Peanut Soup but not with sweet potatoes in it, mine had chicken. I'll have to try this because I already know I love that unique flavor for soup.

    My mom used bisquick for her delicious fluffy dumplings. They were like the inside of a fluffy drop biscuit. 😊 They sat on top of the gravy.

    I know this is off topic. But a suggestion for your garden this year. Make zones . A example.. Zone 1.. Mondays beds. Where you weed,and fertilize as needs. Or if it has tomatoes..then the cages go on or they need anchored to the trellis. Use the back beds for your garlic.. they don’t need help until harvest time,except to weed. I know weather will play a part.. and family obligations, include around the house too. I think it would work and not be too overwhelming.

    Hi Becky thank you so much for sharing your recipes of all the lovely soups. How you made me happy to see the creamy chicken orzo soup. I am Greek Cypriot from Cyprus and there is no one that does not like this soup its a house hold favourite. If we where ill my mum or grandma would make it for us to feel better. My mum used to put about for 3- 4 eggs and plenty of lemon juice as its called Avgolemono soup which translate in english meaning eggs and lemon and without them 2 ingredients its not a true version of it. You have inspired me to make it for my family its 3rd march here in England supposed to be start of spring but its so cold here the soup will be a nice welcome x

    My mom made french or drop dumplings. Flour, milk and 1 egg. Mix to a semi loose consistency and drop tsp into boiling broth. I twiked by seasoning the dumpling mixture with the same seasonings in the broth and used broth in place of the milk. Fluffy everytime. The egg is for added protein
