I have been to India it’s a great country with so many varieties of delicious food. Local government of every city should support the street vendors with small food trucks, gloves & hair caps . Give them clean uniforms or clothing to support. Allocate easy to access locations for their business. Local councils in every area should monitor them. Gradually you will see the difference.
I will tell you one incident. My sisters is social worker she has master degree in social worker or service. She was in government based Apprenticeship program for AIDS and HIV positive people. To help them with health practices provide medicines keep track and provide basic necessities. One of her patients had roadside street food stall of chat. He was given basic things to start his food stall. But he wouldn't use hand gloves. my sister would explain it to him importance of hand gloves while cutting vegetables and preparing food would tell if he cut himself he might infect other. But he won't listen . Would complain and say "madam hum yehi karte baithe kya kam dhandha chodkar."Government does provide financial help through funds to the HIV/ AIDS patients. But some people won't change not even for themselves. Let alone for others.😢😢 this was in 2010-2011 things might have changed now. But I stopped eating at such places since then. 😅 I get scared when I see foreigners eating street food where Indians won't even dare to eat.
Imagine if our municipal corporations empowered them. Taught them basic seminars in hygiene. Provided them with the right equipments needed. We are unstoppable.

Recently there are FSSAI reports on reputed restaurants using rotten veggies, a month old chicken, mutton and serving stored/refrigerated food next day. Its all in your perception. Actually indians are basically immune to most bacteria, viruses. Who spends 300 Rs at restaurants to have just a plate of chat or A plate of pani puri, where it's so economically available on streets (may be 20 Rs to 50 Rs).
