now,Japan is Hanami(cherry-blossom viewing) season.
this time,i use homemade sakura shaped soba bolo cookies!

ingredients
sakura soba bolo(you can use other cookies)
1tbsp instant gelatin powder(melt with 50ml hot water)
200g cream cheese
200ml fresh cream
60g sugar
2-3 tbsps lemon juice
1tbsp instant gelatin
150ml hot water
sake(rice wine) if desired
natural food color
salted cherry flowers
1tbsp sugar
the mold size is about 5.9in

Serena Placier you should check out some of the Asian bakeries. I'm in Boston and Chinatown has some with the craziest most beautiful cakes/ pastries I've ever seen. Nothing like Italian or American bakeries.

It depends where you buy the cakes from, I know some places in America that sell nice marble or customized cakes.
But most people just want the cake to taste good and don't really care about what it looks like as long as it's not cracked or messy.
(Unless you go to a small bakery, usually they pour their hearts and souls into those cakes.)

1. How much water do I have to add to the first gelatine mixture?
2. How much lemon juice do I have to add?
3. How much hot water do I have to add to the mixture?

I know this is late but i tried this today and I can answer only your 2Qs:
1. Add 100ml of water to the gelatin
2. Add like 1/4 tsp of lemon juice, I added the roughly the amount I saw in the video ( maybe half a 1/4 cup) and it was waayyy toooo lemony🙈 so rather stay safe.

UPDATE: got them off of amazon. I made this cake and it’s delicious! Rinse the blossoms of the salt first before topping them on the cake like you’re really gonna need to rinse them well. Even soak them. I went a bit further and also put dried rose buds that you use for rose tea on it

I love cheesecake and cherry blossoms so this would be the perfect combination for me.
I'm really paranoid at the fact that they didn't sift the sugar so when they were mixing it you could hear the gritty grains...
does it make a difference if you sift sugar?
like for flour, it's really fine so it helps break up the clumps, but I don't think that's the same case for sugar

Zahin Hossain It doesn't, you're right. Cane sugar is grains, it can't be sifted. Well it can, but it doesn't do anything and it definitely wouldn't change the sound of the sugar. I think they're mistaking granulated and confectioner's sugar ^^
