Making French Vanilla IceCream

As you will notice, some of my ingredients in the vide didn't match the scale. Unlike baking, I allow myself a bit of a wiggle room when it comes to ice cream. If you added just a bit more Half & Half or sugar, don't stress because it won't make much of a difference. For this video I did not have Half & Half, so I made some. It's what you would imagine it to be : Half heavy whipping cream, half whole milk.
INGREDIENTS:
590 ML ( 2 1/2 CUPS) HALF & HALF
8 EGG YOLKS
235 G (1 CUP) SUGAR
590 G (2 1/2 CUPS) HEAVY WHIPPING CREAM
1/8 TEASPOON SALT
5 TEASPOON VANILLA

Not as long as the ice cream attachment to the mixer is frozen… when I put the prepared custard in the fridge for 8 hours, I also put the bowl attachment in the freezer and it’s ready to go :)

They are not raw they were cooked into a custard
