I replaced white sugar with brown sugar, used canola oil. I've kept in mind not to over mix, turns out deliciously good. Thanks for your video & recipe

I just baked this now with less ingredients, no vanilla, no baking soda, no nuts, no grated apple, no sweetened coconut , no cinnamon but with whey protein and also I decreased the sugar to 100grams and added a bit of milk. Pretty delicious!! My husband loved it! oh I didn't add any frosting on it!!

These muffins are just wonderful! I made them today and even though I left out the coconut on purpose, they came out incredibly delicious. I was surprised that these muffins taste practically identical to the carrot cake on the site, even though the method of putting the batter together is different. Anyway, I love the moisture that comes from the carrots and the apple! :)

no but you will have sesame seeds in your carrot muffins. you can just eat a bagel, you know. add some nuts or raisins. cranberry's are my personal favorite, and if i add any seed it's anise or "fennel".

+Scola NG I would use less batter in your muffin cups. A good rule of thumb is to fill them about 2/3 full.
