I feel like I’m commenting excessively on this post (sorry 🤐) but I had to add that I did a couple of tweaks when making these…AND OMG SO DELICIOUS. I always find allulose amounts in most recipes aren’t enough… not sure if that’s a brand or lot thing, with what I have… so I generally almost double it. But biggest tweak (that I was soooo nervous to do, with them looking so beautiful) was a ‘success secret’ I’d seen on some ‘fancy chef kinda videos,’ 🤓. Several recommended pouring heavy cream over the cinnamon rolls, after 7 minutes of baking. No idea why THAT moment. But I tried it, probably with about 1/3 cup of cream. And they really were divine! I will definitely keep that tweak. ❤ THANK YOU, AGAIN, FOR ALL YOU DO! ❤

I couldn't wait until this weekend and made these cinnamon rolls last night. They really are very good and very close to the "real thing." My husband enjoyed them immensely. But most importantly of all, I really felt like I was baking again. I have always loved to bake and it's the thing I have missed most doing the low carb/keto lifestyle. It's not even eating the things I make, it's the baking process itself. It's always been cathartic to me. Thanks so much Victoria for sharing your creation with us. Bless you! UPDATE: Two days later and these cinnamon rolls (kept in a Ziplock bag) are still soft and moist.

Update on getting the cinnamon rolls to rise. I realized I was using instant yeast instead of active dry yeast. I skipped the preparation step for the yeast and put it directly into the perfect keto flour with 1 tsp. if sugar on top. I made the dough and the rolls, let them rise once and baked them. Worked perfectly. Thank you again for the perfect keto flour.

I made these today. I made a double batch of your flour and a half batch of the cinnamon rolls. I like adding lupin flour. I used 1/3 lupin, 2/3 almond flour. My rolls were not touching when put in to proof. They were touching when I took them out. They are the best keto cinnamon rolls I have made. I used a mix of brown lakanto and white allulose for the filling. If I had a brown allulose I would have used all of that for the filling. I can't wait to try another recipe with your flour mix. Thank you.

My husband and I made this dough and split it in half. With one half we made the cinnamon rolls and with the other half we made apple fritter bars. I know apples aren't technically keto but they're one my husband's favorite foods & he doesn't need all the junky ones so he wanted me to try using your dough for them & it worked beautifully.
For the apple fritter bars I cooked 1 apple in 1 T of the sweetener & cinnamon mixture. Then I divided the dough for the apple fritters in half & pressed half of it + about 2 T cinnamon & sweetener mixture into a parchment lined dish. After cooking & cooling the apples I layered those on top of the dough with cinnamon and sweetener then I mixed the remaining cinnamon & sweetener mixture with the other half of the apple fritter dough and then crumbled it on top of the cooked apples. We proofed it & the cinnamon rolls at the same time then baked according to your directions. After baking I made a simple icing with powdered Monkfruit Sweetener and powdered BochaSweet + heavy cream & a splash of vanilla. I made your cream cheese icing for the cinnamon rolls. I drizzled the apple fritter bars with the icing w/out cream cheese & put the cream cheese icing on the cinnamon rolls. Hubby loved both & pronounced them delicious.🎉 I will definitely be making both again! Thank you so much for all your hard work and for sharing your delicious recipes with all of us! I'm looking forward to trying lots of other recipes with your flour blends! God bless you! ❤️

They did seem a bit dry after proofing, so I think that moisture content when the baking starts could be a factor. I don't know enough about baking to know for sure but I'm going to try covering them while proofing and setting the baking time to 17-18 minutes. All in all, though, this is an outstanding recipe and we're delighted with the results!

Looks great, I'll have to buy some ingredients to make this and your other flour mix. I use a heating pad for a proofer, just plug in the heating pad, put the pan (covered with a towel) on top of it, on low.

I'm SO jealous rn. Really wish I had a batch of your SRF on hand. ;( But I'm really just learning abt it! Those look exactly like the ones I'd make homemade in HS. My Dad alw loved them. As the yrs went on I'd use frozen bread loaves. Still amazing. Definitely NOT on the Keto diet. ;( But these will be!!! It's Sun morning. I'm on a quest to having these made by next Sun! I can't Thank You enough for developing such a useful "tool" for the Keto Community! I've said it once I'll say it again, THIS IS A GAME-CHANGER! ❤️

I know it's crazy but what I have to do is take the keto recipes and use regular sugar because my son wouldn't allow the sugar free sweeteners! I tried! I told him I'm not using flour though only healthy almond or coconut flour etc. So I have to make my own keto stuff separate with sugar free sweetener. So I hope the regular sugar won't mess up this recipe. Can't wait to make these for them. And for me 😊
