The pinto beans with cheese is one of my favorites. Add some cornbread and fried potatoes with onions for this Southern girl and call it supper. Your baby boy is such a cutie. I told my son I was going to make sure cancer realized it picked the wrong girl and he had nothing to worry about. He turned 16 this month and being able to hand him a birthday card with mom kicked cancer’s butt inside and watching him cry tears of relief was the best feeling in the world. He said that was the best birthday present he will ever get.
All the dinners looked tasty. To be even more thrifty you could cook a pound of dried beans and probably get twice the amount as the two cans of beans. The dried beans would probably cost less than the two cans.
Thank you for reminding people to store and use that chicken broth. Homemade broth is so wonderful. Even if I only have a cup or so of homemade broth, adding it to a recipe and also using whatever is on hand, like Bouillon powder or soup base, that one cup of broth imparts a real homemade flavor to the dish or soup you are making.
I feel that your beans and rice could make a nice burrito just to make the meal a little different (they could even be prepped ahead of time and put in the freezer for quick meals or lunch the next day). We have a lot of bbq pulled meat in our house (aka what ever meat is on sale that week or whatever is in the freezer that was on sale) I usually serve ours on a bun because my husband likes it that way, but I think I will try mine without next time, that looked good. I enjoyed seeing the chicken and rice and will be trying that one this week, it looked really good and easy (some days I just need easy and tasty). When ever I cook I save any ends or peels or vegetables that are looking a little old till full. I also save any bones from roasted or from COSTCO or a local grocery stores have Roasted chicken for $5.00 I buy 2 take them home and take all the meat off the chicken and either freeze the bones or make broth/stock as soon as possible in my crock pot. I love to combine all my frozen vegetable scraps with the chicken bones and make a really great broth! Root to Stalk Vegetable Broth Homemade broth is one of those things that is SO worth it, but can feel like such an effort. We love this root to stalk broth because you can save up all your vegetable scraps in a non-reactive freezer container and make it when you have an extra hour in the kitchen. Our favorite part about this broth is that you get to use the parts of the vegetable you might normally compost, so it's like making delicious broth for free! Root to Stalk Vegetable Broth Homemade broth Serves: makes approximately 1 gallon broth Ingredients ⦁ 3-4 leeks, green parts and ends ⦁ 1 bunch of carrots, tops and bottoms plus 3 whole carrots (remove large parts of green) ⦁ 1 zucchini, roughly chopped ⦁ 1 bunch of celery, tops and bottoms ⦁ 1 large onion, quartered or 3 onions tops and bottoms ⦁ 1 handful parsley ⦁ 1 handful thyme ⦁ 2 cloves garlic, peeled Instructions Directions: ⦁ Dump your vegetable roots and stalks in a large pot. Fill the pot until the water just about covers the vegetables. (The ratio here is about 4 cups water to 3 cups vegetable scraps). You pinto beans look good, I wanted to tell you about a recipe I recently made. It was one can ( just 2 people) of trappey brand jalapeños pinto beans, a container on pico( we always have) used about 1 tbsp of the pico. Two slices of bacon cut up and friend and I package of turkey Tasso, used just a small piece of it and cut up. Fried the meat up, added my can of beans, a smudge of water, tbsp pico, season to taste an cooked maybe 10-12 minutes on low, ate over rice, so good!!
I would suggest to use dry pinto beans if you have the time to make it stretch even further and it might cost less. And if you want, to try the ham flavored bouillon when you cook the beans. The flavor is out of this world. Chicken and rice is a staple in my household but I usually just throw everything in a casserole dish and toss it in the oven 😂 but recently I made a broccoli cheese rice casserole and added cut up chicken in the mix. It was so good and made a ton of food thankfully bc everyone went back for seconds.
I’m one of those mamas that didn’t cook. I really regret not making myself cook for the kids. My son cooks but my daughter doesn’t cook a lot. I just never enjoyed cooking and when I would try my husband would say, “Ugh, it looks like it’s been eaten once already.” How’s that for encouragement? (We eventually divorced and my next husband likes my cooking.) So I wasn’t very motivated to spread out my skills. But I don’t have children relying on me anymore, so I’m okay. And I cook more now that there’s someone to encourage me.

I make a lot of Persian food. It can be super cheap. Lots of rice. Meat is more of a flavoring. It's really cool because I will make some tofu with beef flavor (vegan beef base) some tomato sauce, a little lemon and a little eggplant. Served over rice. I buy one eggplant t and will get 4 to 6 meals from it. You can used canned Jackfruit to stretch chicken or pork. Pretty much any meat you want kind of shredded.
Hi I’m coming over from Mindy’s channel. Your budget meals look very tasty and inexpensive. I’ve been making a chicken and rice one pot meal for a long time. It’s definitely worth the effort and tastes even better the next day.
Thank you Maria, I know have a family of 6 (3 hungry men) so I'm looking for more filling homemade meals and less process food buying since it cost more. It's a little challenging,but I do plan ahead and buy more carbs like rice, potatoes, pastas, and frozen vegetables.
Thank you for sharing these recipes. I had two cans of pinto beans as well as some instant rice on hand so I made the beans and rice. I forgot that it called for cheese but it was still delicious. Also I did not have any sour cream on hand. I did saute first a pound of turkey sausage that I had and that really boosted the flavor and the content. The trick about blending up one of the cans of pinto beans is spot-on. It really thickens up the dish. I would tell people to watch the beans as it simmers it may get a little too thick and they may need to add a few spoonfuls of water to thin it out. Very easy recipe and the whole meal came together within 30 minutes.
That was so sweet of your husband to say that, you can tell your family appreciates the time you put in to make them food.

I would suggest to use dry pinto beans if you have the time to make it stretch even further and it might cost less. And if you want, to try the ham flavored bouillon when you cook the beans. The flavor is out of this world. Chicken and rice is a staple in my household but I usually just throw everything in a casserole dish and toss it in the oven 😂 but recently I made a broccoli cheese rice casserole and added cut up chicken in the mix. It was so good and made a ton of food thankfully bc everyone went back for seconds.
I love to add corn to the corn bread. So good.
I’m one of those mamas that didn’t cook. I really regret not making myself cook for the kids. My son cooks but my daughter doesn’t cook a lot. I just never enjoyed cooking and when I would try my husband would say, “Ugh, it looks like it’s been eaten once already.” How’s that for encouragement? (We eventually divorced and my next husband likes my cooking.) So I wasn’t very motivated to spread out my skills. But I don’t have children relying on me anymore, so I’m okay. And I cook more now that there’s someone to encourage me.
I am very sure you cared for them in other ways! You did the best you could with what you had. I’m glad you are with a kind man now ❤️❤️❤️

I make a lot of Persian food. It can be super cheap. Lots of rice. Meat is more of a flavoring. It's really cool because I will make some tofu with beef flavor (vegan beef base) some tomato sauce, a little lemon and a little eggplant. Served over rice. I buy one eggplant t and will get 4 to 6 meals from it.
You can used canned Jackfruit to stretch chicken or pork. Pretty much any meat you want kind of shredded.

Thank you Maria, I know have a family of 6 (3 hungry men) so I'm looking for more filling homemade meals and less process food buying since it cost more. It's a little challenging,but I do plan ahead and buy more carbs like rice, potatoes, pastas, and frozen vegetables.

Thank you for sharing these recipes. I had two cans of pinto beans as well as some instant rice on hand so I made the beans and rice. I forgot that it called for cheese but it was still delicious.
Also I did not have any sour cream on hand. I did saute first a pound of turkey sausage that I had and that really boosted the flavor and the content.
The trick about blending up one of the cans of pinto beans is spot-on. It really thickens up the dish. I would tell people to watch the beans as it simmers it may get a little too thick and they may need to add a few spoonfuls of water to thin it out. Very easy recipe and the whole meal came together within 30 minutes.
