Éclair of the French taste, filled with rich and sweet custard cream.
How to make
1. Add the choux dough into the piping bag
2. Squeeze the bag along the lines on the parchment paper
3. Spray the choux dough and bake it at 180 degrees for 20 minutes, or at 160 degrees for 15 minutes
4. Add 2/3 of sugar into egg yolks and whip it
5. When the color of yellow starts to get lighter, add flour and corn starch using a sift
6. Add milk and the remaining sugar into the pot and heat it up
7. When the milk starts to boil, turn the heat off and add it to 5 and whip it
8. Add it to another pot, heat it up while whipping it
9. When the cream starts to get thick, move it to a bowl and mix it with butter
10. Wrap the bowl and make sure the air doesn't get in the bowl and use iced water so it can cool down in the fridge
11. Use a hand mixer to break off hard cream and put the cream in to a piping bag with a nozzle
12. Make holes on the back of the choux
13. Fill the choux stick with cream into the two holes
14. Melt white chocolate with a double boiler, cover the surface of choux and decorate it with fruits or chocolate
