    Crunchy Keto Crackers:
    Dry Ingredients-
    6 Tablespoons or (60 grams) Hemp Hearts - Shelled Hemp Seeds
    4 Tablespoons or (24 grams) Whey Protein Isolate
    2 Teaspoons or (6 grams) Acacia Fiber
    2 Tablespoons or (14 grams) Unflavored Collagen
    1/4 Cup or (30 grams) Parmesan Cheese
    5 Tablespoons or ( 30 grams) Pork Rind Crumbs
    1/2 Teaspoon Baking Soda
    1 Teaspoon Baking powder
    1/2 Teaspoon Onion Powder
    1- 1/2 Tablespoons or (9 grams) Cheddar Powder or you can substitute with (6 grams) of Butter Powder
    Thoroughly combine all of the dry ingredients into a medium size mixing bowl.
    Wet Ingredients-
    2 Tablespoons of melted Butter that's cooled
    1 Tablespoon Sour Cream or you can substitute with greek yogurt or even Whipping Cream
    1 Heaping Teaspoon of Dijon Mustard
    1 Whole Egg
    Whisk together until well blended and creamy.
    Add the wet ingredients to the dry ingredients and stir until all ingredients combine together to form a dough as shown in the video.
    Pre-Heat Oven to 375
    Place dough onto a lightly greased sheet of parchment paper pre cut to the size of your silicone mat. Ours measured (9-1/2x14-1/2) Spread out the dough mixture with a spatula to form the rectangle shape of your mat. Cover
    with another lightly greased sheet of parchment paper. Use a rolling pin and roll out dough to fit mat edges. Flip over if necessary to remove any creases
    and continue to roll until smooth. Remove top piece of parchment paper and place your rolled out dough onto a cookie cooling rack. Place the rack onto a cookie sheet use a silicone mat under the cookie rack to avoid the rack from sliding while placing into the oven. Bake for 7 minutes.
    (Whisk one egg white until frothy and set aside until ready to use)
    Remove from oven and carefully slide the parchment paper onto a safe cutting surface. Apply a frothy egg white only wash over the tops of your crackers with a pastry brush. Grease your pizza cutter or knife and score your crackers. We made 8 rows across and 6 rows lengthwise. Making a total of 48 evenly sized crackers. Place cracker sheet back onto the cookie rack and return to oven for and additional 7-10 minutes. Remove from oven and slide crackers off the parchment paper to cool completely. Cooling on the parchment paper could cause moisture to build on bottom of parchment that can cause crackers to lose the crunchy texture. The crackers will continue to crisp up as they cool. Since everyone's oven cooks a little different you might have to pop them back into the oven to crisp. Sometimes you have to remove the outer crackers first if the center ones haven't crisped up to your liking. Just watch them so they don't burn. Cool completely before storing in an airtight container.

    Total Carbs 0.3 grams
    Dietary fiber 0.1 grams
    Net Carbs 0.2 grams
    Serving size= 8 crackers per serving (Only has 2.5 grams Total Carbs)

    Great to find this recipe as it will be a great addition to a get together since I do keto and don't eat grains. I also think that most non-keto people would enjoy this and never realize it wasn't what they normally eat.     I’m excited to try these!
    A good cooking spray tip is to put your pan or a sheet pan with the parchment on it on the open door of our dishwasher. Then, just spray and the overspray gets washed away!

    I used flax meal because I didn’t have any hemp hearts and I don’t eat pork so used 1 tablespoon of gelatine and they were delicious.

    Thanks so much for this recipe! You have made my husband a very happy man. He enjoys the main version you have here, but I have been experimenting with a less savory version, so I made it by substituting the butter powder for the cheddar powder and omitting the onion powder. They are very, very good. (I wish I had thought to leave the mustard out of the wet ingredients. I’m going to try just upping the sour cream a bit and I think they will be perfect.) They are almost like free food-so light and crunchy. The downside is I’m going to have to make them constantly! (My husband lived on crackers before keto.) I also sprinkle a bit of sea salt after the egg wash. It’s a nice little touch. I think I like them better than flour-based crackers. (It was amusing to me that I had every single ingredient already, except the acacia fiber. I’m developing a regular old keto kitchen “lab.” One key thing I do that really makes a difference for those who are interested: After I pull these out of the oven on the final stage, I put them in my dehydrator overnight (10 hours on mine at 158 degrees.). Perfection, even if they are a little too thick (which is a challenge).
    Update: In experimenting more with my “plain version,” I have landed finally on this combination: I exchange the cheddar powder for butter powder as described in the recipe, I omit the onion powder and the mustard, and I add 1 tsp of Lakanto Monkfruit Sweetener (a combination of erythritol and Monkfruit). Please don’t use allulose or Bochasweet if you want a crispy cracker. Those sweeteners won’t help. The sweetener will not make your crackers sweet. It just balances the savory a bit and makes it more like a regular plain cracker. I also sprinkle a little sea salt on the egg wash, which my husband loves.
    Finally, I do not use the racks any more: I roll them as thinly as I can on parchment paper and bake them according to instructions for 7 min each cycle (see the recipe). They will be a little browned but the middle crackers still may not be crispy. I them put them in my dehydrator for several hours, which make them perfect. They will not need crisping again if you do that and keep them in a bag or airtight container. Again, I am so grateful for this recipe. Anyone would enjoy these crackers, keto or not, and they’ve really filled a big gap in our pantry-with almost no carbs!

      We've used other types of cheese etc..Asiago powder instead of the cheddar powder. Also just the plain Butter powder with Dill. Even used Turmeric. You can really season any way you like as long as you don't add any additional salt. We did a taco version with our own seasoning. We tried Everything but the Bagel but it was a salt bomb. If you can find pork rinds without any salt then you'll have a better chance on not having them turn out too salty. Others in our comments have used Flax instead of the hemp seeds with good results. Flax has a bit of a bitter taste if you bake it too long. It can burn easily. We tried to turn this into a sweet cracker but it was a total fail. We'll eventually revisit this recipe. We can only make so many fails before we completely give up. Let us know what you try. Thanks again for watching! Karen and Therese

    Going to try this with a couple modifications. ⚠️
    People should be made aware that hemp seed is high oxalate. ⚠️ ⚠️ ⚠️
    I ran into oxalate toxicity after my first couple of years on keto (I'm at 5 years now) from too much spinach, almonds, etc. It has taken me 3 years of very careful lowering oxalate intake to just BEGIN to feel better.
    Oxalates can build up over time within the body and settle into various parts of the body... joints, skin, digestive tract, kidneys, bladder, etc.

      Thanks so much for your information. You certainly can use less of the hemp seeds per recipe maybe use more of the crushed pork rinds. We also try to limit the use of almond flour in our recipes for the same reason. Please get back to use with the substitutions you try.       I ended up using lightly crushed pumpkin seeds instead of the hemp ... worked beautifully 😍
      And, in lieu of cheddar powder, I had cream cheese powder... yum!
      And, since I didn't have acacia, I used same amount of psyllium. I would imagine that ground flaxseed would work well too and probably a little easier on the gut...which I am babying these days.

      Are you not able to purchase hemp seeds in your area? Currently we do not have a replacement for the hemp. However you might be able to use almond flour or some combo of almond/coconut flour. We're tried several combinations of ingredients which fell flat. The crackers were too dry and lacked that cracker crunch. We chose the hemp hearts because of their nutty flavor and they are filled with healthy fats. They're also considered a complete protein source which means that they provide all of the essential amino acids that we need in our diet. They contain a better omega-3 to omega-6 ratio. They also contain about double the amount of protein than flax or chia. You can try to replace the hemp seeds with flax or chia. It will be your own science experiment.       I too have to avoid anything “hemp” because it will cause positive drug test. I work where drug testing can occur at any moment. Would be a bummer to be busted for crackers!

      One comment from @kayewatson6168 said she used flax in place of the hemp and 1 TBS gelatin instead of the pork rinds. She was pleased with the results. Let us know what you try. We know about being careful when using poppyseeds but were unaware of the hemp hearts causing any issues because we're only using the seed not the hull. Thanks for pointing that out.     Hi Ladies! I made the crackers yesterday and they are the best keto friendly crackers I’ve had. Somehow when I mixed the dry ingredients I completely left out the collagen. They came out fine. So my question is, what effect does the collagen have on their flavor or texture? I will put it in next time but was wondering. 🤤

      Hi there! We're just thrilled that you enjoyed our cracker recipe. Also glad that they turned out for you despite not using the collagen . The collagen is used to keep the crackers together as a binder so they won't be so crumbly and also to keep them light and airy at the same time so you get that light crunchy mouth feel. That's why it's in the recipe. The recipe is very forgiving and many subscribers have made substitutions using ours as a base with positive results. We encourage you to read what others have tried.     Is there a different fiber, other than acacia fiber that can work? (I know, the recipe you gave works best!). Thanks for a yummy looking recipe

      We used the acacia fiber to help give the cracker a more dough like mouth feel without having a dry choke taste. However you can try oat fiber or maybe even coconut flour to see if the results aren't too dry for you. Please let us know if that works for you. We understand about the cost of purchasing yet another ingredient but if you follow our channel we use the acacia in several recipes. It really makes a big difference in the end result.       Yes , you can omit the acacia fiber if you don't have it and use oat fiber however the mouthfeel will be different than our original recipe. Check out the comments left from our subscribers because everyone has shared their substitutions and the results. Please do the same for others. It also helps us when creating new recipes. The acacia fiber gives the cracker a doughy melt in your mouth feel and keeps the dryness away all while keeping the cracker crunchy. We know it's another ingredient to purchase but if you follow our channel we use all of the ingredients in several recipes so it's not going to be for only one recipe. We use it in our bread recipes too. Be sure to click on the bell notifications so you don't miss our next video.       This is just a suggestion because we haven't tried this. You could use Chicken or Beef Flour in place of the Acacia Fiber and just use more crushed pork rinds and parmesan cheese in place of the hemp seeds. If you read through the comments section other subscribers have made successful substitutions for the hemp seeds. We always read the comments before trying recipes because you sometimes find great info that might fit your dietary needs better than the sticking to the original recipe.     I made these and the taste is great, they were awesome fresh made but…. They turned soft and stale-like the next day. How do you keep the crunch on the leftovers??

      The crackers have to be stored in an airtight container. They also have to be completely cooled off before storing. We haven't had that happen. All we can suggest is you most likely can crisp them up by popping them back into the oven or air fryer. I know that isn't the solution you were hoping for but for now that's all we have. It could be that your elevation or climate where you live might affect the moisture level. You're the first to make a comment with this problem. Let's hope it was a one time fluke.     Are you baking them on a wire rack without a baking sheet???

      We put the crackers rolled out on the parchment paper and placed that on a cookie rack which we placed onto a cookie sheet. Really for ventilation so the parchment paper wouldn't hold moisture. You can just place the cookie rack directly onto your oven shelf rack but we felt it was a little dangerous when lifting out of the oven and would be safer to show in a video.     Is it okay to leave out the hemp seeds? I can’t think of a reason that the recipe needs it other than texture. Can these be made in advance & if so, what are your recommendations for storage?

      If you make our crackers using our recipe then the answer it yes to being made in advance. Just be sure that they are completely cooled before storing in an airtight container. They should be fine for about a week. We don't no if they would last longer because everyone has been eating them like crazy. We chose the hemp seeds because of texture and their nutty flavor. They also have a good omega-3 to omega-6 ratio. They also provide all of the essential amino acids that we need in our diet. We don't like to use almond flour because of the oxalates and we didn't care for the flavor of the flax or chia. We have no idea what would happen if you left out the hemp.     How long do they keep in fridge or counter

      These crackers will be fine on the counter in an airtight container for about 4-5 days unless you live in a very humid environment. They might even last longer but we don't really know because the our family goes through them pretty quickly. Do not put these in the fridge because they will loose their crunch for sure.     Easier way?? I wonder if taking the parchment paper from under the crackers using the longest side - would be less to actually try to keep on the rack. You had such a long area to remove - the other way would be shorter.

    Is there a way to print your recipe as noted? I tried to highlite it to print, but it would not let me. I really don’t want to hand copy as it is a little long. Any ideas?

    Can I use bamboo fiber instead of acacia fiber?

      We haven't tried the bamboo fiber but sure it would work or oat fiber. Please read through the subscribers comments because many have used substitutes and had great success using our base as the recipe. Not sure if the bamboo would make the crackers more dry or change the taste. It's certainly worth trying. This recipe doesn't seem to be too fuzzy with sticking to the exact ingredients. Please come back and share your results. After all, aren't we all just searching for the ultimate best crunchy cracker. Thanks for watching! Karen and Therese

      We wouldn't suggest that substitution. You could either leave it out altogether or add oat fiber if you have that.

    Is there a substitute for unflavored collagen or can I just omit it? Also, could I use avocado oil instead of melted butter? Thank you.

      You can try gelatin in place of the collagen maybe only use 2 teaspoon of the gelatin and as for the avocado oil that should be fine. Although we haven't tried that yet. Please read some of the other subscribers comments because they made substitutions and each had successful results. Please get back to us with what you try, It really helps all of us.     Would love to try these, but I don't want to buy flavor powders. If using freshly grated cheddar instead of powder, how many grams should I use?

    Is acacia fiber equivalent to oat fiber? Can flax seeds be used instead of hemp seeds? I don't really want to buy more ingredients when I have others in bulk already. These sound really good and I'd love to have good low carb crackers!

      Hi Deborah. You can replace the hemp seeds with flax meal. It will change the flavor and you'll have to watch them closer in the oven because flax tends to acquire a burnt taste if over baked. One of our subscribers (@kayewatson8168) had good results doing using flax meal and also she also replaced the pork rinds with 1 TBS gelatin. As for the Acacia vs the Oat fiber. You can try it but only use half as much oat fiber. Acacia fiber is very light and we feel it gives a light airy feel to the crackers. I'm afraid that the oat fiber will make them have a very dry mouth feel. We tried coconut flour and that's what happened. We totally understand about purchasing yet another ingredient. But if you follow our channel we use the same ingredients over and over so the Acacia wouldn't be for just a one time recipe. It's great in our "Less ingredient Wonder Bun" video. It's our favorite bread/bun substitute for our low carb lifestyle. Let us know what you try with the cracker substitutions. Thanks for Watching! Karen and Therese

      Also @critter4004 ended up using the same amount of psyllium in place of the acacia fiber. They also used crushed pumpkin seeds instead of the hemp. We always read the comments on videos because everyone always has good ideas for substitutions in order to fit their dietary needs. It also saves on wasting ingredients if they let you know what definitely doesn't work. Thanks again

      @@lowcarbspin thank you so much for your detailed answers! I'm new to your channel and always looking for new recipes. We've regressed a little too much the past few months after having been keto for 3 years. I don't buy all the prepackaged "keto" products out there. I will make note of these variation options and test a batch, watching them closely. I will also start watching some of your other videos and catch up on other good recipes.

      Usually we use Judee's brand but we ran out and used King Arthur Better Cheddar Cheese powder. You can also use graded fresh Cheddar cheese. We've also used Asiago Powder. In the comments a subscriber used cream cheese powder and loved the results. We're thinking the base dough is rather forgiving. Let us know what you end up trying. Thanks for watching!
