How to make Creme Brulee Cupcake (video)

  • Crème Brulee is such big hit at our household that we are finding different ways to enjoy it.
    Inspired by The Baker Chick, I combined my all-time favorite Vanilla Sponge Cake recipe with my chocolate éclair pastry cream filling and made these oh-so-pretty Crème Brulee Cupcakes.
    Ingredients:
    Cupcakes
    ½ cup (64 g) cake flour
    1 tsp baking powder
    Pinch of salt
    3 large eggs (approx. 60 g each) - yolk and white separated
    65 g caster sugar - for egg yolks
    3 tbsp (42 g) unsalted butter - melted in microwave
    1 tbsp vegetable oil
    1 tbsp water
    1 tsp vanilla extract
    2 tbsp (28 g) sugar - for egg whites
    ¼ tsp cream of tartar - for egg whites
    Crème patisserie (pastry cream)
    6 egg yolks
    2 ½ cup (600 ml) milk
    ½ cup (100 g) caster sugar
    ¼ cup (30 g) corn starch
    ¼ cup (30 g) plain flour
    ½ tsp vanilla extract
    ½ cup (120 ml) whipping cream
    Makes 12 cupcakes
