    Hey Flo! Made this with your recipe for pounded out schnitzel from pork, which came out both crispy and tender. You were right about the intensity of the vinegar and beef broth marinade and how it needs to be added a little at a time to the potatoes in order to taste authentic. My cucumber salad needs some work though. But overall I think I could impress some German guests or at least my friends from Wisconsin who regularly cook German fare! Thanks for all the recipes and tips!

    I had a student holiday job (From England) when I was 16/17 about 40km East of Munich in a Dorf called Lengdorf. I had my first German food including the potato salad in Friedel's Gasthof/Brauerei and have been hooked on German food ever since - I'm 70 now - with beer in hand Flo, and off to the kitchen to bash some pork fillet for a Schnitzel . Prost.

      @@FlosGermanKitchen Much more fun than interesting. My brother and I worked (accommodation included) for a building firm called M. Holnburger's Baugeschäft in Lengdorf. Given our ages at the time we were just given jobs labouring but became friends with his sons (and in the 'local' pub) Very very fond memories and everyone was so friendly. Back then there were agencies that advertised short term holiday jobs abroad in the schools & colleges for language students in various countries and is how we ended up in a small but lovely place like Lengdorf.

      @@FlosGermanKitchen About 40% was in Friedel's pub - the rest was the boss's family and his eldest son Ulrich Holnburger who took us all over the place showing off the area and the Lengdorf people there generally.

      I promise, i will! But I try to stick with traditional german seasons so I might do that in fall/winter as Rouladen in Germany is a more 'wintery' meal, often served with Rotkraut (red cabbage) and dumplings.

    My grand parents on both sides of my family were of Czechoslovakia heritage and were amazing cooks and this brings back some of the amazing smells coming from there kitchens.

    Flo, great job - just subscribed - we had a wonderful dish at Anna aus Praha Gasthaus, she called it Spaetzle Duppel gebakt - it was a Spaetzle casserole mit Schinken, Zwiebeln, und Kase. If, you are familiar with it, I think that would make a great video

    New sub here. I am going to make your schnitzel and potato salad for my family. I have one question though, is the potato salad served hot or cold? Here in the US, we refrigerate our potato salad before serving. Also do you serve anything else with it, like a green vegetable or some bread?

      Usually we don't refrigerate the potato salad. The potatos naturally chill to room temperature as the salad needs to rest for a while to marinade. Ant room temperature is just perfect.
      As for green stuff, yes there is always the option to serve lettuce with the Schnitzel and the potato salad. My favorite combination is the one they also serve at Figlmüller in Vienna. They serve a lambs lettuce with a vinaigrette of pumpkin seed oil. That's fantastic!

      @@FlosGermanKitchen Flo, thank you the answers - I made your pork loin schnitzel and potato salad it was a huge hit. Even my kids who are very picky were feasting on it. I also saw somewhere that Austrians like cucumber salad with sour cream and vinegar so I made that as well. Do you guys make that up north?

      @@aragorn1ring Yes there is a pretty similar kind of cucumber salad in Germany. Some people also add cucumber slices to their potato salad to 'freshen' it up a little but personally I wouldn't do that because i do like the heartyness of my potato salad.

    Traveling in Germany decades ago, I loved a potato salad that was very balanced in its sweetness/sourness, served cold, potatoes sliced as you had done in this video. The dressing was clear & the potatoes a creamy white. I've tried to recreate it, including with something like the recipe you demonstrate but the beef broth prevents that very white color. Any suggestions?

      Hey Susan, I'm wondering a bit. The only potato salad I know that's "creamy white" would be the northern way that contains mayo in the dressing or maybe it had to do with the kind of potatoes that were used. Your referring to a balance of sweet and sour points more to the direction of northern Germany as in the kind that we eat in the south there are no sweet components at all. Guess that doesn't help you a lot, though. 😳

      @FlosGermanKitchen Thanks for answering. There was no mayo; just vinaigrette, silky (not creamy) in texture. Perhaps it was as you made it but without beef broth. Maybe just a vinegar solution. The potatoes were still white. I had it most often in cafeteria-style restaurants.
      Ah, well, now I'm inspired to try making it myself, to try and recreate the flavors I recall! Thank you so much. I'll continue watching your channel.

    How much weight in potatoes did you use?

      Must have been around 1.5 Kilo. Good thing is, that you don't really need exact measures. Use as many potatoes as you need for you, your family or guests and just add the sauce bit by bit until the salad starts "schwätzen".

      There are a lot of varieties of potato salad. Some with added cucumbers, some with bacon, in northern Germany they even prepare the sauce with mayonnaise.
      The one i share here is the traditional swabian/bavarian plain potato salad that does not contain bacon.
      Does that mean you can not add bacon without being arrested by the potato salad police? Nope. There is no potato salad police 😎and for me, cooking is never a subject of strictly following recipes. I think in my whole life i never cooked a meal by strictly following a recipe with exact measurements and amounts. I always take recipes as an inspiration an then recompose them to my personal taste. That is, what makes cooking a creative work. If it was about following recipes, chefs could be replaced by robots.

      I grew up in Bavaria and we never added bacon. For my American husband I had to add boiled eggs and pickles and of course mayonnaise but no onions 😂
