100 Year Old Potato Salad Recipe - Authentic Brooklyn NY Deli Potato Salad

  • This is a 100 year old potato salad recipe from my aunt. She owned several delis in Brooklyn, NY many years ago and used to make most of the food that was sold herself. When she bought one of the delis, the previous owner passed on all of the recipes to her. My family has been making this potato salad ever since. The original recipe called for Wesson Oil but you can use any vegetable oil that you like. My aunt always used red potatoes so I still make it with red potatoes. My aunt also used to garnish it with fresh parsley and some carrot curls. I didn't have any on hand when I filmed the video but it makes for a nice presentation.

This is a recipe for an Authentic New York Deli Potato salad. This is how the potato salad was made over 100 years ago and how it is still made today in many New York and Long Island delicatessens. The secret to its wide appeal is in its simplicity.

My grandmother passed away a while ago and you and her share an accent. Listening to you talk is like going back in time and listening to my own grandmother talk to me and teach me how to cook as a child. I have so many amazing memories waking up to the smell of amazing food in the mornings, I would stand in the kitchen and she would just turn around, smile and ask me if I wanted to learn to make it myself. I always said yes. I would wake up at 4am to help on thanksgiving and she would always brag to her friends how I was the only other person in our family who was allowed to touch the turkey and the gravy because no one else made it as good as I did. She left behind all of her handwritten recipes to me on her passing. We shared a deep bond when it came to food and hospitality. I miss her every day. Her potato salad is basically the same with some other additions. I'm going to go out and buy the ingredients and make for dinner tonight.

My parents had Fuller brushes, I still have a few!
People may not believe that your brush is 50 years old but I can attest to that. My parents brushes look just as good now as they did when I was a kid. Of course I haven't used them very much in recent decades. I keep them for nostalgia. Things were made to last a long time in those days. And companies put their reputation behind their product. Most of that has disappeared these days, sad to say.

Your Aunt's recipe is quite different from my Grandmother's recipe. She passed away in 1972 but luckily she gave me a few of her recipes. Her's is 5 lbs of potatoes, cooked similar to what you showed, basically her recipe is the same as yours until you start adding the extra ingredients. Her's consists of potatoes (she favored red for this too), Hellman's mayonnaise, finely chopped celery, dried or fresh parsley, six hard boiled eggs, chop four and slice two for the top as decoration. It's a recipe that is requested on a regular basis. My Aunt Rita made her potato salad the same except she added 50/50 mayonnaise and sour cream.

Thank you for the recipe and nostalgic info. When I was a kid we didn't have the internet- and wouldn't miss it back then- but we had so many other things. Like Grandma said, the Fuller Brush man, the Helms Bakery truck that would come down your street, tooting it's funny horn every morning selling wonderful bakery items. The Good Humour man selling ice cream was a treat that kids looked forward to during the summer months especially. We loved the music from the truck telling us that ice cream was on it's way. Times were good and not to be forgotten.

So, basically u boil red potatoes for 25 min. let them cool, peel the skin, slice them in a pan. Grate onion over the top. Boil 2 c. cold water with 2 T. white vinegar till first boil only. Let cool. Mix some with mayonnaise to make creamy, then pour over potatoes. Super easy ! Can’t wait to try it! Thanks! 👍🌝

Added 3 extra Tbsp sugar, 1 tsp salt, 4 extra Tbsp vinegar not to the pot but to the potatoes themselves when cut up. and had to boil an extra 5 min on high bc potatoes were still slightly crunchy inside. I grew up on eastern Long Island, in rural potato country. We didn't grow potatoes, but we always had a 50 lb bag of them (eastern all-purpose white variety) in the basement, that Dad had traded a bushel or two of tomatoes (or peppers, eggplant, zucchini, etc.) for. I ate a LOT of potatoes --- and potato salad --- growing up!🥔🍅
Our typical recipe variant: chopped celery and onions, dressing of mayo, white vinegar, S&P, celery seed. To this I sometimes now add a good squeeze of sriracha.🌶️ Late in life, Dad came up with a new and very unexpected variant: he substituted fresh lime juice for the vinegar---sounds like a weird pairing, but it works! My uncle, who loved visiting New Orleans, made a southern potato salad version with a mayo/yellow mustard base, and I think onions (scallions?) and celery. Might have had relish in it, I don't remember any more, but it was good, too.
Ooh, a Grandpa Feral visual perspective on the taste test! Neat touch!

    • @patriciamorgan6545

@@GrandmaFeral The lime juice was a real secret ingredient-- gives the potato salad a little extra freshness you don't expect, and makes you wonder, 'Oh! What IS that? I can't tell, and I don't care. Yum!'😋

    • @patriciamorgan6545
      @patriciamorgan6545 3 года назад +2

I use cider vinegar in my cucumber salad and in beet salad pretty much exclusively. Dad stuck to his white vinegar for his cukes, but it was too medicinal for Mom and I, as he used too much. We thought he might be doing that deliberately to keep the salad for himself!😉 (I like a lot of vinegar, too, but mine is more in balance with the other ingredients, and the cider vinegar gives it more complexity.)
Mom loved making Waldorf salad, too, but I don't recall the dressing, other than it was very simple, probably little more than mayo. Maybe some lemon to prevent oxidation of the apples, a little S&P. I'll have to try that again come fall, see if I can work out her recipe from memory. Do you toast your walnuts? I don't remember us bothering.

I do have a suggestion for you! If you live anywhere the 'noxious invasive weed' garlic mustard* grows, you can pick the young leaves or flowers and chop them up for a seasoning, or add to sour cream or cream cheese for a spread, sauce, or dip.
Like mustard, it is a member of the cabbage family, so it will not cause the same problems you have with the onion family. The flavor truly is a wonderful mix of mustard and garlic. It does not withstand long cooking, as the flavors are volatile, so cook it quickly or use it as a last-minute garnish when serving it in hot dishes like soups or omelets. There are a lot of recipes for it.
It is a native plant in Europe, and we prize it highly. I'm a forager, so for me the best way to get revenge on a 'weed' is to eat it if you can. 💚
