I made this! I bought the cookbook, read all of the intro stuff and get to the literal first recipe (this one) and couldn't believe that ONE RECIPE IN I've already been stopped in my tracks, and I'm already planning the day I'm going to make it. I love biscoff, I love plums, and it happened to be the absolute peak of plum season. Ended up taking it to a get together with friends and everyone loved it and thought I was a baking genius, little did they know it was ridiculously easy to make 🤗
So made this after the video dropped (getting book for my bday) i did a 9 by 13 pan and it took 8 plums for the filling 3 for the top 4 cups of whipped cream and 2 1/2 packs of biscoff for anyone who need it
Currently making this with black plums because there weren’t red plums at the store. The color of the cream itself is still beautiful with the light fleshed black plums, even if the topping plums won’t be as impactful. The plum puree on its own was so good, and reminded me a lot of a spiced punch my family makes on Christmas Eve! Such a nostalgic smell and taste! Can’t wait 12 hours to cut into it and have a slice!
I have made similar recipes in the past and I can highly recommend not fully mixing the fool. That way you get some bites that are more creamy and some bites that are more fruity plus you get a marbling effect than can look really nice depending on what fruit you use! :D

So glad the toaster oven fits a bread pan and the toaster oven is outside in the summer! Not limited by a hot day to tackle this one! Oreos (not the wafers) + whipped cream and a couple of days, is the icebox cake I grew up with - no sugar in the whipped cream - the cookie filling was enough extra sugar!
Lemon tiramisu using savoiradi biscuits (moistened with limoncello spiked lemonade,) layered and "frosted" with lemon curd/whipped cream/lemon zest mixture, then decorated with candied lemon peel or roasted super thinly sliced lemons. It was amazing.
I just happened to have everything on hand to make this recipe and it is sooooo good Claire! Perfect summer dessert. I love an icebox cake and used to always do the chocolate wafer ones with strawberries and whipped cream. This might be my new go to!
My aunt used to actually make a really similar recipe, only with butter biscuits and peaches 😋 I loved that recipe so much, this one feels like a more spicy and adult version of it
I just made this and enjoyed with friends. Absolutely delicious! It’s an easy recipe to make bigger so I made extra of the whipped cream and 6 plums for the puree. This allowed me to make a mini loaf pan size in addition to the standard one. We had some of the extra puree drizzled over our cut slices and that was a great finishing touch!
Hey Claire, obsessed with your cookbooks. I've made this dessert and it is just a delight. The tart plums mixed with the whipped cream just create such a light dessert. So dangerously easy to eat that I ended up eating 3 pieces the day I first made it! 🙈 As of today, I've cooked every recipe in Dessert Person and am at 87 out of 102 recipes in What's For Dessert and I am just blown away at the consistency and quality of every recipe. I love cookbooks and usually have some favorites and some that i just don't really like, but with What's For Dessert, pretty much every recipe I have either liked or absolutely adored. Amazing job, cannot wait for the next book! (No rush!)

I made this and it was delicious! The sweet and tart plums and the spicy cookies were perfect combination. I made one regular version and one keto version as I have many family members that keep a keto diet. Definitely more work as I had to make the keto cookies. I used a recipe for speculoos cookies from All Day Long I Dream About food and swapped in swerve sweeteners. Turned out great and the keto cookies didn't turn to mush!
I learned about those "ice-box cakes" originally via Emmy Made, as she's made a few of them of different types over the years, simple things yet very delicious looking... :D
I made this yesterday! Only have 7 hours to set but still came out lovely! Rather than roast the plums because it was a hot day, I used some fancy raspberry rose jam and it was so good! I did find the lotus cookies a bit sweet, so might try again with Graham's! Thank you Claire!! Our guests loved it!

Here in Australia we do a Chocolate Ripple cake which is similar... Arnotts Chocolate Ripple biscuits lined up with whipped cream in between. My favourite topping is crushed peppermint crisp on top!

So it's not summer here, and I really wanted to give this a go. We have a lot of rhubarb growing so I thought that would go really nicely with Biscoff biscuits. So I roasted the rhubarb with some sugar, cardamom and a couple of tablespoons of port and whizzed it up, saving some long stalks for the top of the cake. I put it together just like your plum icebox cake and wow!!! This was so easy, and an absolutely amazing show-stopper dessert! We had it for the man-things birthday dinner and everyone raved about it and totally demolished it. I'm looking forward to summer to do this again (we have two different plum trees).
We don't have any plums, and the 8yo loves strawberries sooo... We made strawberry puree and used these amazing thin vanilla shortbreadish cookies (I was thinking Girl Scout trefoils but nothing was available). But also, we need to use the Oreo recipe to make thin chocolate cookies and make that inspiring recipe.

Made this last night for a small get together today. It was delicious and the perfect summer dessert! Tidbit: I somehow had over a cup of left over "fool", so I put it in my Ninja Creami and added Biscoff cookies as a mix-in -- SO GOOD!!!
My wife taught me how to make Carlota de limon, which is a Mexican ice box cake where you use Marias Gamesas (almost like a thin Nilla Wafer) and mix equal parts evaporated and condensed milk, and 2-3 limes per 2 cans of milk (we'll use 2 cans of each to make a 13x9 and a small loaf tin cake, so like 4-5 limes!) Just blend the 3 liquids and spread it between the cookie layers! Sooooo good and so easy!

I just made this last week but subbed peaches for the plums! It came out really well. I think the Biscoff overpowered the peach a little bit so I’m thinking of replacing a layer of cookies with a layer of peach slices in the middle next time.
Tip: try to find “speculoos” or “speculaas” spices. It’s a spice mix common in the Low Countries (Belgium and the Netherlands). Biscoff is essentially a very sweet version of the speculaas cookies and treats we eat here in all sorts and sizes, especially in the colder months. The spice mix is similar to pumpkin spice. You could also look up a list of what should be in a speculaas spice mix (google “speculaaskruiden” and let the translater do the rest). The individual spices are probably easier to get.
Have a lake cottage holiday next week. Can not waiiitttt to make this for my family. Can you do coconut cream? I’m dairy free gluten free. Any biscuits you recommend?

I used to bring it to every family gathering after that and was my favorite cake for years and years. I miss it, and I'd love to see you recreate it!
