The only difference will be that I'll be using beef (although I love pork as well). The type of cut I purchased contains a lot of fat in between the muscle fibers (7-Bone Chuck Roast). I feel that as long as I allow the meat to simmer enough to tenderize fully, it will turn out just as great. I had the carrots and green peas in mind already but after seeing the red and green bell pepper, I just might add these to the mix. I can see it adding another layer of flavor.
