I have used your recipe in my semi truck! I have a 6 qt instant pot and a toaster oven, my wife's Mexican and I've spent the last 30 years eating her cooking and I miss it when I'm on the road. It's almost impossible for me to stop at "real" Mexican taqurera's because the size of my truck so I've been slowly learning to make my own. I've got a small gas table top grill and I get some strange looks when I'm setting in a truck stop parking lot laid over for the weekend somewhere in the Midwest and cooking carne asada on the back of my trailer! My wife will cube up a small tri tip then marinade it for a day then vacuum pack them and freeze them for me to take. Now if I could just find an easy way to make homemade tortillas in the truck I'd be set!

If you have a small stop top grill, find a small comal to place over the grill. For tortillas mix masa, salt and water and hand shape your tortillas:) I appreciate the follow and please stay safe on the road.

Great job!! I make carnitas in our instant pot all the time. As a matter of fact leftover carnitas is what my wife packed for my lunch today, we made them a couple nights ago. My recipe is very close to yours, one difference being that instead of using dr. Pepper like you did, I use a cerveza and then a little splash of chicken stock. And when it’s time to brown them I do it in a skillet on the stove top in a little bit of lard (Manteca). My wife is Mexican, from the state of Coahuila, and she claims they are delicious so I guess they’re not too bad lol. Great recipe and great job!!👏🏻👌🏻

Hey Ana, just wanted you to know that my son and I are so happy we have found your channel. We can't wait to get started on your recipe's, they look fantastic. We are in England so we may have trouble to get some of your ingredients, but we are going to try our best as you have inspired us so much. I have asked Santa to bring me a tortilla press for Christmas and some massa flour so Charlie and I can make our own fresh tortillas together. Hope you have a lovely Christmas with your family. Love from the Parkin family.

Doing this right now but I opted to do one thing different. Instead of searing the meat I put the chunks on the smoker with maple wood for about an hour then finish exactly as described here. Just put everything in the IP. Will probably finish in cast iron pan on the Egg instead of broiling. Smoking a pineapple also.🤙 I'll report back.

    • @SaltyCocina

I've made it without the bay leaves and it comes out fine. The lime juice you can serve it as a side for topping. The orange juice is definately a must.
