I’ve heard ppl from rural China pronounce that word as: su fu.
Any thoughts on why they say it differently?

In China, people in different areas might speak Mandarin differently, and even I've got a bit of an accent. Understanding native Mandarin speakers often depends on context and background. So, for beginners, it's good to listen to people who speak clearly and accurately.
Most news broadcasts have good Mandarin pronunciations, so I recommend beginners to listen to the news.
